Lemon Madeleines

1. In a large bowl blend eggs and sugar add butter and blend well
- 2 * 2 eggs
- 1/2 * 1/2 cup white sugar
- 5 * 5 tablespoons unsalted butter
- 3/4 * 3/4 cup all-purpose flour
- 1 * 1 teaspoon baking powder
- 1/4 * 1/4 teaspoon vanilla extract
- 1/2 * 1/2 lemon, juiced and zested
- 1/3 * 1/3 cup confectioners' sugar for decoration
Pear Crisp with Vanilla Ice Cream

Perfect pear crisp recipe
- FILLING:
- 4 to 5 large pears, like Bosc
- 2/3 cup sugar
- 1/4 teaspoon salt
- TOPPING:
- 1 1/2 cups all-purpose flour
- 1/3 cup sugar
- 1/3 cup brown sugar, firmly packed
- 1/2 teaspoon cinnamon
- 1/2 cup pecans, very finely chopped
- 1 stick butter, about 8 tablespoons, melted
Creamy Chiken Enchiladas

Melt butter in a large skillet over medium heat; add onion, and saute 5 minutes
- 1 * 1 tablespoon butter or margarine
- 1 * 1 medium onion, chopped
- 1 * 1 (4.5-ounce) can chopped green chilies, drained
- 1 * 1 (8-ounce) package cream cheese, cut up and softened
- 3 1/2 * 3 1/2 cups chopped cooked chicken breast
- 8 * 8 (8-inch) flour tortillas
- 2 * 2 (8-ounce) packages Monterey Jack cheese, shredded
- 2 * 2 cups whipping cream
