Herb and Potato Chip Crusted Beef Tenderloin

1. Preheat oven to 400°. Sprinkle tenderloin with 2 tsp
- 1 (4- to 5-lb.) beef tenderloin, trimmed
- 3 teaspoons kosher salt, divided
- 3/4 cup panko (Japanese breadcrumbs)
- 3 garlic cloves, pressed
- 2 teaspoons coarsely ground pepper, divided
- 3 tablespoons olive oil, divided
- 1 1/4 cups crushed, plain kettle-cooked potato chips
- 1/4 cup finely chopped fresh parsley
- 1 tablespoon finely chopped fresh thyme
- 1 bay leaf, crushed
- 1 egg white, lightly beaten
- 1 tablespoon Dijon mustard
- Garnish: fresh sage

Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil
- 1 pound lean ground beef
- 1/4 - 1/2 cup brown sugar (I like it sweet so I usually do closer to 1/2 cup)
- 1/4 cup soy sauce (I use low-sodium)
- 1 Tablespoon sesame oil
- 3 cloves garlic, minced
- 1/2 teaspoon fresh ginger, minced (see note)
- 1/2 - 1 teaspoon crushed red peppers (to desired spiciness)
- salt and pepper
- 1 bunch green onions, diced (don't skip this!)
Kettle corn

Heat oil in pot. Add 3 kernels of corn
- ~1 TBSP oil
- 1/3 cup popping corn
- < 1/4 (a little less) cup sugar
- ~ 1 tsp salt ( a little more) to taste
Poppy Seed Chicken

Cook chicken and cut into cubes (or shred)
- 1 can cream of chicken
- 8 oz sour cream
- 6-8 chicken breasts, cooked
- 1/2 cup butter
- 1 stack Ritz crackers
- 2 TBSP poppy seeds
- to serve 8-10
- 8-10 chicken breasts
- 2 cans cream of chicken
- 16 oz sour cream
- 1/2 cup chicken broth
- 1 pkg shell pasta, cooked
- Topping remains as above
Bacon in the Oven

Creamy Italian Chicken

Place the chicken in a slow cooker or crock pot
- 4 pieces Boneless, Skinless Chicken Breasts
- 1 envelope (about 1 Oz.) Italian Salad Dressing (dry)
- 1/4 cups Water
- 1 package Cream Cheese (8 Oz. Softened)
- 1 can (10.75 Oz. Can) Condensed Cream Of Chicken Soup (undiluted)
- 1 pound Noodles
- 1 pkg crimini (baby portabella) Mushrooms, sliced
Pineapple Pie

For the pie, cream sugar, butter, and egg yolks in a saucepan
- FOR THE PIE:
- 3/4 ¾ cups Sugar
- 1/4 ¼ cups Butter
- 2 whole Eggs (separated)
- 1/3 ⅓ cups Cornstarch
- 1/2 ½ teaspoons Vanilla Extract
- 1/2 ½ cups Plus 2 Tablespoons Of Water
- 8 ounces, weight Canned Crushed Pineapple
- 1 whole 9-inch Pre-baked Pie Crust

Preheat oven to 375 degrees
- 1 bag frozen Italian Style meatballs (32 meatballs)
- 1 jar (28 oz.) pasta sauce
- 2 cans refrigerated crescent rolls
- 11 slices mozzarella cheese, cut into thirds
Fresh Strawberry and Chocolate Pie

1. In a saucepan, melt the 6 oz of chocolate and allow to cool
- 1 6-oz pkg (1 cup) semisweet chocolate pieces
- 1 8-oz pkg cream cheese, softened
- 3 TBSP honey
- 1 9-inch baked pastry shell
- 4 cups fresh, whole strawberries, stems and caps removed
- Melted semisweet chocolate (optional)
