Combine all the ingredients, except the potatoes, in a medium bowl and season with salt and pepper, to taste
- 1 1/2 cups prepared mayonnaise
- 1/4 cup Dijon mustard
- 2 tablespoons fresh lime juice
- 2 tablespoons chipotle pepper puree
- 1 large ripe tomato, seeded and diced
- 1/4 cup chopped cilantro leaves
- 3 scallions, chopped, white and green parts
- 1 medium red onion, thinly sliced
- 1/2 teaspoon cayenne
- 4 cloves garlic, finely chopped
- Salt and freshly ground black pepper
- 16 new potatoes, about 3 to 4 pounds, cooked, drained and sliced 1/2-inch thick

- 1 tablespoon olive oil
- 3 teaspoons whole cumin seed
- 2 medium onions, finely chopped (about 3 cups)
- 5 garlic cloves, roughly chopped
- 1 green bell pepper, finely chopped
- 2 boneless and skinless chicken breasts (about 1 3/4 pounds), cut into 1-inch cubes
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 dried bay leaf
- One 28-ounce can chopped tomatoes with their juice
- One 4-ounce can green chiles, finely chopped
- 2 1/2 cups homemade or low-sodium canned chicken stock, skimmed of fat
- 1/2 teaspoon coarse salt
- 4 cups canned kidney beans, drained and rinsed
- Freshly ground black pepper
- 2 ounces (1/4 cup) low-fat sour cream, for garnish (optional)
- Fresh cilantro leaves, for garnish (optional)

- 1/4 cup blanched almonds, toasted
- 1 small garlic clove
- 1 cup fresh parsley leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 2/3 cup extra-virgin olive oil
- 1/8 teaspoon red-pepper flakes
- Coarse salt and ground pepper
- 2 teaspoons white-wine vinegaror white balsamic vinegar

1. Prepare Pastry for Single-Crust Pie
- Pie:
- 1/2 cup sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 6 cups thinly sliced, peeled cooking apples
- 1 recipe Crumb Topping
- 1/2 cup chopped pecans
- 1/4 cup caramel ice-cream topping
- Crumb Topping:
- Stir together 1 cup packed brown sugar, 1/2 cup all-purpose flour, and 1/2 cup quick-cooking rolled oats. Using a pastry blender, cut in 1/2 cup butter or margarine until the topping mixture resembles

Martha's Coffee Cake

- Mix the following together and save out 1/2 C for the topping:
- Makes batter enough for one 8 X 8 pan.
- Warm oven to 375 degrees
- 1/2 C brown sugar
- 1/2 C white sugar
- 1/4 C butter
- 1 C flour
- Add in the remainder of the ingredients:
- 1/2 C buttermilk mixed with 1 egg
- 1/4 C flour mixed with 1/2 teaspoon baking powder and 1/2 teaspoon baking soda
- Pour into a greased pan and sprinkle with the reserved topping
- Bake about 25 min.
