Grilled Steak & Gorgonzola Pizza

Not only did the flavors blend beautifully, but the textures were equally amazing
- Steak
- 10 oz. New York strip steak
- Marinade, see below (optional but highly recommended; it was delicious)
- 2 T. Olive oil
- Pizza
- 1/2 lb. pizza dough
- Flour (and cornmeal if available), for work surface
- Olive oil, for brushing crust
- 1/2 cup shredded Fontina cheese
- 1/2 cup shaved Parmesan cheese
- 1/2 - 3/4 cup Gorgonzola (I used closer to 3/4, but I love bleu cheese)
- Handful of arugula
- Balsamic Reduction
- 1 cup balsamic vinegar
- 1 T. honey
- 1/4 t. black pepper
Pumpkin Crème Brûlée

Preheat an oven to 300°F
- 1 1/2 cups heavy cream
- 1 1/2 tsp. freshly grated cinnamon
- 1/4 tsp. ground allspice
- 1/2 tsp. freshly grated ginger
- 3/4 tsp. freshly grated nutmeg
- 5 egg yolks
- 1/2 tsp. vanilla extract
- Pinch of salt
- 6 Tbs. pumpkin puree
- 1/3 cup plus 4 tsp. granulated sugar
- 1 Tbs. firmly packed light brown sugar

- 8 to 10 ounces assorted hard candies
- 8 to 10 lollipop sticks
White Chocolate Bark

Preheat the oven to 350 degrees F
- 1/2 cup walnuts
- 16 ounces very good white chocolate, finely chopped
- 1/4 cup dried cranberries
- 1/4 cup medium-diced apricots
Freeform Cheesecake Poured over Fresh Fruit

In an electric mixer with the paddle attachment, beat the cream cheese until smooth
- To serve:
- 12 ounces cream cheese, at room temperature
- Pinch salt
- 2 whole lemons, zested and juiced
- 2 tablespoons almond liqueur
- 4 eggs, at room temperature
- 1 cup sugar
- 32 ounces mascarpone cheese, at room temperature
- 6 to 8 cups fresh fruit, cut into bite-size pieces
- 1/2 lemon, juiced
- 4 tablespoons sugar
White Turkey Chili

In a large sauté pan over medium heat, warm the olive oil
- 2 Tbs. olive oil
- 1 large yellow onion, diced
- Salt and freshly ground pepper, to taste
- 2 tsp. toasted ground cumin
- 5 garlic cloves, minced
- 1 jalapeño, seeded and minced
- 1 lb. Anaheim chilies, roasted, peeled and diced,
- or 3 cans (each 7 oz.) whole fire-roasted
- Anaheim chilies, diced
- 4 to 4 1/2 cups low-sodium chicken broth,
- warmed
- 1 lb. diced cooked turkey
- 3 cans (each 15 oz.) cannellini beans, drained
- and rinsed, or 4 1/2 cups cooked white beans,
- drained
- 2 Tbs. minced fresh oregano
- 1/3 cup minced fresh cilantro
- 1/4 cup cornmeal
- Shredded jack cheese, sour cream and lime
- wedges for serving
Chicken Vindaloo

Blend first 11 ingredients and 1/4 teaspoon cayenne pepper in processor until paste forms
- 3 cups chopped onions
- 1 1/2 cups chopped seeded tomatoes (about 4 medium)
- 2 1/2 tablespoons distilled white vinegar
- 1 large garlic clove, chopped
- 1 teaspoon minced peeled fresh ginger
- 1 teaspoon tomato paste
- 1 teaspoon garam masala*
- 1 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon (or more) cayenne pepper
- 2 tablespoons vegetable oil
- 6 skinless boneless chicken thighs, cut into 1- to 1 1/2-inch pieces
- 1 1/2 pounds russet potatoes, peeled, cut into 1-inch pieces
- 1 1/2 cups low-salt chicken broth or water
OREO Cookie Balls

Mix cream cheese and cookie crumbs until well blended
- 1 (8 ounce) package cream cheese, softened
- 36 OREO Cookies, finely crushed
- 16 ounces semi-sweet baking chocolate, melted
Caramel Sauce

Mix the water and sugar in a medium heavy-bottomed saucepan
- 1 1/2 cups sugar
- 1/3 cup water
- 1 1/4 cups heavy cream
- 1/2 teaspoon pure vanilla extract

- Confectioners’ (Icing) sugar: 2 ¼ cups (225 g, 8 oz.)
- Almond flour: 2 cups (190 g, 6.7 oz.)
- Granulated sugar: 2 tablespoons (25 g , .88 oz.)
- Egg whites: 5 (Have at room temperature)
