Vodka-Thyme Lemonade

Spread the sugar in a shallow dish
- 1 tablespoon sugar
- Ice
- 3 lemon wedges
- 1/4 cup Lemon-Thyme Syrup
- 1/4 cup vodka
- Splash of club soda
- 1 thyme sprig
Raspberry Coconut Popsicles

Makes 10 to 12 1. Place all ingredients except shredded coconut into a blender and blend until smooth
- 1 (13.5 fl. ounces) can light coconut milk
- 4 cups fresh raspberries
- 1/2 cup honey
- 1/2 cup Greek yogurt
- 1/2 cup superfine sugar
- 2 limes, zested and juiced
- 1/4 cup shredded coconut
- 10-12 popsicle sticks
Vegan Apple Turnovers

Adapted from Apple Turnovers by Ina Garten
- 2 lemons
- 2 big (or 3 medium) tart apples, peeled, cored and cut in a 1/2 inch dice
- 3 tablespoons sugar, plus extra to sprinkle on top
- 1 tablespoon all purpose flour
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Pinch salt
- 1 package (2 sheets) frozen puff pastry, defrosted
- Oil spray (I used coconut)
Italian Quinoa Bites

Heat oil in a medium skillet
- For the bread coating:
- 1 cup Rice Chex
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp thyme
- For the Quinoa Bites:
- 1/2 c. dried quinoa, cooked with 1 c. water
- 2 Tb gluten-free flour
- 1 Tb flaxseed meal + 2 Tb water, let sit for 5-7 min
- 1 Tb sundried tomatoes (in oil), diced
- 1 Tb non-dairy cheese of choice (optional)
- 4 fresh basil leaves, chopped finely
- 1 tsp non-dairy milk
Melon Basil Summer Rolls

1. Cut the melon in half, remove the seeds, peel and slice the flesh into strips
- Summer Rolls
- 15 about 15 rice paper wrappers
- spicy cilantro almond pesto
- 1/2 about 1/2 purple cabbage - thinly sliced
- 1/4 - 1/2 ripe sweet melon such as Honeydew
- 2-3 medium carrots - finely shredded
- 2 cups fresh basil leaves
- large handful fresh mint leaves - optional
- Tamarind Dipping Sauce
- 1/4 cup almond butter
- 1/4 cup tamarind paste
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon fresh grated ginger
- 1 tablespoon maple syrup or honey
- 1/2 tablespoon olive oil
- 1 teaspoon soy sauce
- 1/2 small red chili - seeded and minced (optional)
Tofu Steaks with Shiitakes and Veggies

- 1 (14-ounce) package extra-firm tofu, drained
- 3 tablespoons dark sesame oil, divided
- 3 tablespoons lower-sodium soy sauce, divided
- 1 cup julienne-cut red bell pepper
- 1 cup matchstick-cut carrot
- 1/8 teaspoon salt
- 4 garlic cloves, thinly sliced
- 1 (5-ounce) package presliced shiitake mushrooms
- 1/2 cup organic vegetable broth
- 1 tablespoon honey
- 2 teaspoons sherry vinegar
- 1/2 teaspoon crushed red pepper
- Cooking spray
English Muffins, vegan

In a bowl, combine the powdered soy milk, sugar, 1/2 tsp salt, yeast and both flours mixing well
- 3 tbsp powdered soymilk (or dry milk if you don't want vegan)
- 2 tbsp sugar
- 1 tsp salt, divided
- 2 tsp yeast
- 1 c all purpose flour
- 1 c whole wheat flour
- 2 tbsp margarine (or butter if not vegan)
- 1 1/3 c warm water (about 110F)
- 1 tsp baking soda
- 1 tbsp cider vinegar
- oil for greasing pan and rings
Roasted Cauliflower Soup

Instructions Preheat oven to 400
- 1 cauliflower (I used an orange one)
- 1 onion, cut into wedges
- 2 cloves garlic, peeled
- 4 cups fat-free vegetable broth
- 1 large potato, peeled and cubed
- 1/4 teaspoon freshly grated nutmeg
- salt and pepper, to taste
- 4 drops truffle oil (optional, but good)
- Smoked Spanish paprika, to garnish
Beef tip and Trader Joe's Eggplant Dip stir fry

Cook beef tips and polenta together until heated through
- 1 bag Gardein beefless tips
- 1/2 jar Trader Joe's eggplant dip
- 1/2 roll of polenta or 1 cup homemade with butter and parmesan cheese

- 1 1/2 teaspoon lime juice
- 2 tablespoons fresh cilantro, chopped (garnish)
- 1 –2 green onions, sliced (garnish)
- corn chips, crumbled (garnish)
- hot sauce or cayenne
- pepper (optional)
