Carrot and Nut Loaf

Preheat oven to 350. Combine carrots, croutons, cheese, onion, and nuts
- Carrot and Nut Loaf:
- 2 C grated carrots
- 2 C croutons, crumbled
- 1/2 Cup Italian Blend Cheese
- 1 large onion, finely grated
- 1/2 C chopped nuts
- 3 eggs, beaten
- (Non-stick spray)
- 1 C half & half
- 2-3 T chopped cilantro
- Head of Cauliflower
- Salt, pepper, butter
Potato Omelet

A time consuming recipe, but very popular
- 1 onion, diced
- 4 white rose potatoes, peeled and diced
- 7 ounce can whole green chiles, diced
- 2 tablespoons cooking oil
- 6 eggs
- 8 ounces jack cheese, shredded
- Green chile salsa
Festive Casserole

Cook sausage according to pkg
- Casserole:
- 1 package Morningstar sausage links
- 12 slices bread, cubed
- 2 C cheddar cheese
- 1 Cup salsa
- 4 eggs
- 3/4 cup milk
- Salad:
- 9 oz bag spinage
- small can mandarin oranges, drained
- 2 oz. sliced almonds
- dressing
Zucchini Croquettes

Coarsley shred zucchini. Toss shredded zucchini with salt in bowl
- Croquettes:
- 6 medium zucchini
- 3/4 teaspoon salt
- 4 eggs
- 1 t minced garlic
- 3/4 C flour
- 1/2 C grated Parmesan
- 1/4 t pepper
- non stick spray
- Sour Cream\
- Corn on the cob
Spicy bean salad

Stir the peppers, onion, and all beans in a large bowl
- Spicy Bean Salad:
- 1 large green pepper, diced
- 1 large red onion, diced
- 15 oz can kidney beans, drained, rinsed
- 15 oz can pinto beans, drained, rinsed
- 15 oz can black beans, drained, rinsed
- 1 C salsa
- 2 T Red wine vinegar
- 2 T olive oil
- 3 T chopped cilantro
- Small Head cabbage, shredded
- 1 onion, sliced thinly
- 2 T oil
- salt, pepper
Stroganoff

An easy, vegetarian version of Beef Stroganoff, served with broccoli
- 1 onion, chopped
- 3 Tablespoons butter
- 16 ounces sliced mushrooms
- 1 package Morningstar burger crumbles
- 1 can Cream of Mushroom soup with roasted garlic
- 1/2 cup sherry
- 2 cups sour cream
- 16 ounces egg noodles, cooked
- 1 large head broccoli
- grated Italian cheese
Mock Meatloaf

Preheat oven to 350o F. Combine all ingredients form loaf and place in greased loaf pan
- 3 c cooked quinoa
- (3 eggs, beaten)
- (1 c oatmeal)
- (3 slices toasted bread, crumbled)
- 1/2 onion, chopped
- 1 c sliced mushrooms
- (2 t soy sauce)
- (1/2 t dry mustard)
- (1/2 thyme)
- (1/2 t garlic powder)
- Broccoli
- (Butter & salt)
Mushroom, Spinach & Cheddar Wraps

- Pkg flour tortillas
- Pkg sliced mushrooms
- 1 c shredded cheddar cheese
- 6 + oz spinach
- 1 c prepared salsa
- (oil)
- (Salt/pepper)
- 10 potatoes, chopped
- (Olive oil, salt & pepper)
Fajita Salad

Brown sausage in oil; add onion & green pepper; sauté until tender
- (1 T oil)
- 1 pkg meatless sausage links, sliced
- 1 onion sliced
- 1 green pepper, sliced
- 1 head romaine lettuce, chopped
- 4 oz shredded Mexi-blend cheese
- 8 oz sour cream
- (Salsa)
- Cantaloupe
Mega Salad

- 1 lg head red leaf lettuce, chopped
- 1 can sliced beets, chopped
- Feta cheese
- Can of artichoke hearts, chopped
- 2 oz chopped walnut pieces
- 1 cucumber, sliced
- Sundried tomato dressing
