- 2 large apples, peeled and cored
- 2 each 10 oz crescent rolls
- 1 c butter
- 1 1/2 c sugar
- 1 tsp cinnamon
- 12 oz mountain dew
Hasselback Potatoes

Preheat oven to 350º. Butter baking dish and set aside
- 4 large russet potatoes cleaned well
- butter
- 1 lb gruyere (1/4 inch thick slices cut into 2" squares)
- 1 c milk
- 1 c sour cream
- nutmeg to taste
- 1/4 c prosciutto thinly slices and cut into ribbons
- 1/2 c parmigiano reggiano, finely grated
- 1/2 c panko bread crumbs
- salt and pepper

- Cake: 1 c butter, room temp
- flour for dusting pan
- 2 c sugar
- 6 eggs, room temp
- 1 tsp vanilla
- 12 oz box vanilla wafers, finely crushed
- 6 oz coconut
- 1/2 c pecans, chopped
- Glaze: 2 c sugar
- 2 tbsp cornstarch
- pinch of salt
- grated zest of 2 lemons
- 1/4 c lemon juice
- 6 oz pkg fresh or frozen coconut
Thai Chicken in Coconut Curry

In a cup, mix together the coriander, tumeric, cayenne and 1/2 tsp salt
- 1 tap ground coriander
- 1/2 tsp gruond tumeric
- 1/8 to 1/4 tsp ground cayenne
- 3/4 tsp salt
- 1 lb boneless, skinless chicken thighs
- 1 c sliced onion, sliced halved
- 1 c sliced bell pepper, preferable red or yellow
- 1 shallot, thinly sliced into half moons
- 3 cloves garlic, minced
- 2 tsp grated fresh giinger (I used ginger in the tube)
- 1 can (14 oz) light coconut milk
- 1 tsp brown sugar
- 1-2 tsp thai red curry paste ((I used only 1 tsp and still added some milk)
- 1 tbsp chopped fresh basil
