Creamy Chicken Enchiladas

Preheat oven to 350 degrees
- 1 can cream of chicken soup
- 1 can green enchilada sauce
- 1/2 cup sour cream
- 12 corn tortillas
- 1 1/2 cups shredded chicken
- 3/4 cup shredded cheese
Skewered Beef Satay

- 1/2 cup soy sauce
- 4 Tbsp brown sugar
- 4 tsp salad oil
- 1 tsp ground cumin
- 1 lb filet mignon steaks - cut to 1 inch cubes
- 1 medium onion - cut into 8 wedges
- 6 Tbsp smooth peanut butter
Southwest Chopped Salad

Since Adam prefers his salads chopped style, I've been experimenting with different ones
- 2 handfulls mixed greens - chopped
- 2 handfulls spinach leaves - chopped
- 6 romanita tomatoes - diced
- 1 avocado - diced
- 2 green onions - thinly sliced
- 1 can white corn
- 1 can black beans - drained and rinsed
- 1/3 cup mexican blend shredded cheese
- 1 tsp garlic salt
- 1/4 cup Herdez salsa
- 1/4 ranch dressing
Tomato and Pine Nuts Pasta

Bring a pot of salted water to the boil and cook the angel hair until "al dente", about 3 minutes
- 1 lb angel hair pasta
- 2 1/4 tbsp olive oil
- 3/4 chopped sweet onion (~2 cups)
- 6 cloves garlic, minced (~2 tbsp)
- 1/3 cup wine, white dry
- 3/4 cup chicken broth, canned, low sodium
- 24 yellow cherry tomatoes, halved (~3 cups)
- 24 red cherry tomatoes, halved (~3 cups)
- 1/3 cup basil, fresh, chopped
- 1 1/2 tbsp pine nuts, toasted
Greek Inspired Rice

I wanted a Greek flavored rice to go with a lemon & feta chicken I was making for dinner and came up with this
- Tbsp Smart Balance Margarine
- 1/8 cup chopped shallots
- 1/8 cup chopped carrots
- 2 tsp lemon juice, divided
- 1 package Trader Joe's Rice Medley
- 2 Tbsp chicken broth
- Garlic salt to taste
Sour Cream Pancakes

1. Combine all ingredients in a blender
- 1 1/4 cups all-purpose flour
- 1 egg
- 1/4 cup buttermilk
- 1/4 cup sour cream
- 1/4 cup water
- 1/4 cup white sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup vegetable oil

- 2 chicken breasts, cut into small pieces
- 1 cup chicken broth
- 1 Tbsp + 11/2 tsp sugar
- 2 Tbsp soy sauce
- 1 Tbsp rice wine
- 2 Lg egg whites
- 1 Lg egg
- 6 scallions, trimmed and thinly sliced
Baked Italian Macaroni

Cook pasta according to directions; drain
- 1 lb dry large elbow macaroni
- 1 sm onion, chopped
- 1 lb ground beef
- garlic and seasoned salt to taste
- 1 jar spaghetti sauce
- 1 can tomatoe sauce
- 1 can diced tomatoes
- 1 1/2 cups shredded cheese
- 3/4 cup sour cream
- 3/4 cup cream cheese
- 2 Tbsp grated parmesan cheese
Naan BBQ Chicken Pizza

- 4 Pieces Trader Joe's Tandoori Naan
- 1/2 cup barbecue sauce
- 1/4 cup thinly sliced red onion
- 1 cup cooked, shredded chicken breast
- 1 cup shredded low fat cheddar cheese
- Garlic salt

- Pie Filling:
- 1 lb. 95% lean ground beef
- 1/2 onion, diced
- Garlic salt
- 2 cups frozen peas, carrots, and corn
- 1/6 cup gluten free all-purpose flour
- 1 Tbsp tomato paste
- 3/4 cup chicken broth
- 1/4 cup skim milk
- 1 Tbsp gluten free Worcestershire sauce
- 3/4 tsp dried thyme
- Mashed Potatoes:
- 8 cups chicken broth
- 1 medium potato, peeled and chopped
- 1 small head of cauliflower, chopped
- 1/4 cup skim milk
- 2 Tbsp low fat sour cream
- Garlic Salt and Pepper to taste
