- GLUTEN-FREE FLOUR BLEND:
- 1 cup, plus 1 teaspoon brown rice flour, separated
- 1 cup, plus 2 tablespoons almond flour, separated
- 3/4 cup potato starch
- 1/4 cup tapioca starch
- EGG SUBSTITUTE MIXTURE:
- 3/4 teaspoon Ener-G Egg Replacer
- 1 tablespoon warm water
- 3/4 teaspoon baking powder
- 1 1/2 tablespoons pumpkin puree
- DONUTS:
- 3/4 cup and 2 teaspoons gluten-free flour blend
- 1/3 cup and 1 tablespoon ground jaggery sugar or other unrefined sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- egg substitute mixture
- 1/3 cup almond milk or other non-dairy milk
- 1 tablespoon apple butter
- 1 1/2 teaspoons olive oil
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin spice
- CINNAMON SUGAR:
- 1 teaspoon ground cinnamon
- 3 tablespoons organic sugar

- 2 cans (15 ounces) garbanzo beans or chickpeas, rinsed and drained
- 1 cup coarsely chopped cilantro leaves
- 1/2 cup lime juice
- 1/4 cup water
- 3 tablespoons olive oil
- 4 garlic cloves, halved
- 1-1/2 teaspoons grated lime peel
- 1 teaspoon garlic salt
- 1/2 teaspoon cayenne pepper
- Assorted fresh vegetables or crackers

Directions: 1. Start by blending the nuts and date for your bottom layer
- Top Layer:
- 1/2 cup raw walnuts
- 4 large Medjool Dates, pits removed
- 2 tsp agave, maple or brown rice syrup
- pinch of pink salt
- 1 Tbsp softened virgin coconut oil (organic)
- 1/8 tsp cinnamon
- Cream Layer:
- 1/2 cup raw cashews***
- 2 1/2 Tbsp hot water
- 2 tbsp softened virgin coconut oil (organic)
- 2 Medjool dates (pitted)
- 1-3 drops vanilla extract or raw vanilla bean (optional)
- If you have time to soak your cashews -DO IT. Your cream will be MUCH silkier and softer than mine. I could only flash soak in hot water for a few minutes, thus my cream was a bit textured)
- Bottom Layer:
- 1/3 cup raw walnuts
- 1 date, pitted
- 1 tbsp raw hemp seeds (not blended)
- Chocolate Ganache:
- 1/3 cup dark chocolate chips (vegan)
- 1 1/2 Tbsp virgin coconut oil (organic)
- pinch of salt
Simple Oil-free Vegan Pasta Salad

Pasta salad is just pure genius in my opinion
- ngredients, makes 4 servings:
- 200 g brown rice fusili pasta
- 3 on-the-vine tomatoes
- 1 cucumber
- 1 small can of corn kernels
- 1/2 large red onion
- 1-2 tbsp balsamic vinegar

- Dried spices, to taste:
- Oregano
- Basil
- Thyme
- Rosemary
- Freshly ground black pepper
