Five Minute High Raw, Vegan Eggnog

Blend all ingredients in a blender on high
- 2 1/4 cups almond milk
- 1/2 cup raw cashew or almond butter (I like cashew for this recipe: macadamia would work, too)
- 1/3 cup + 2 tbsp maple syrup or agave (OR 1/2 cup pitted dates)
- 1 tsp nutmeg
- 1 tsp cinnamon
- 2 tbsp bourbon (optional)
Creamy Tomato Soup

Add all ingredients except cashews and fresh basil to a large soup pot and simmer for 30 minutes
- 4 cups carrot juice
- 2 lbs fresh tomatoes, diced
- 2 cups frozen corn
- 4 celery stalks, sliced
- 1 onion, diced
- 1/4 cup sun-dried tomatoes, diced
- 4 garlic cloves, minced
- 2 TBS MatoZest or other no-salt seasoning
- 1 tsp dried thyme
- 1 bay leaf
- 1/4 cup raw cashews
- 1/4 cup fresh basil, chopped

- 1 (15 ounce) can garbanzo beans, drained
- 1 cup fresh cilantro, or to taste
- 1 jalapeno pepper, stemmed and diced - or to taste
- 2 cloves garlic, diced
- 1 tablespoon olive oil, or as needed
- salt and ground black pepper to taste
- 1 pinch garlic powder, or to taste
Mini Pumpkin Pie Tarts (Gluten-free, Vegan + Refined Sugar-free)

Directions Shells Preheat oven to 350ºF
- Tart Shells:
- 2 cups almond flour
- 2 tablespoons maple syrup*
- 1/4 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- dash of ground nutmeg
- 1/8 teaspoon salt
- Filling:
- 1/2 cup raw cashews, soaked for at least 4 hours, preferably overnight
- 1/4 cup maple syrup*
- 1 teaspoon vanilla
- 1 cup fresh pumpkin puree (see my post on how to make your own, canned will also do)
- 2 tablespoons coconut oil, melted
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- a pinch of ground cloves
- a dash of sea salt
- Whipped Coconut Cream:
- 1 can organic full fat coconut milk, refrigerated overnight
- 2 teaspoons maple syrup (use more or less or none at all, or whatever your favorite sweetener is)*
- 1 teaspoon vanilla
- Maple can be substituted 1:1 for honey if you follow SCD

Directions Fill a large pot 3/4 of the way with water and place over high heat
- 1 pound farfalle pasta
- 4 plum tomatoes, cut into 1 inch dice
- 8 basil leaves, cut into chiffonade
- 1 lemon, juiced
- 1/4 cup extra-virgin olive oil
- 3 teaspoons salt
- Fresh basil leaves, for garnish

- Vanilla Bean Maple Almond Butter [yields 1 1/3c]
- 2 c raw almonds
- 1/3 c whole flax seeds
- 2 T + 1T maple syrup [they are added in at different times]
- 2 t vanilla bean paste [or 2-3t vanilla extract]
- 1/4-1/2 t salt
- 1/2 T safflower oil
Decadent Layer Cake

To make the cake spring appropriate i use orange blossom essence and refreshing cardamom powder
- ingredients
- cake
- dry ingredients
- 200 200 200 grams whole rice flour
- 100 100 100 grams almond flour
- 50 50 50 grams arrowroot*
- 10 10 10 grams baking powder
- 3 3 3 teaspoons cardamom powder
- 2 2 2 tablespoons guargum*
- pinch pinch of seasalt
- to could leave arrowroot & guargum out, however i would not advise it. the cake will be much more crumbly and dry. this will make it more difficult to cut the layers and… is a bit less tasty!
- wet ingredients
- 400 400 400 grams (over) ripe banana (+-4 pieces)
- 12 12 12 tabelspoons palmsugar#
- 8 8 8 teaspoons almondbutter
- 30 30 30 drips of organic orange blossom essence
- 50 50 50 pistachio nuts, peeled in chunks
- to 3 the cake is fairly sweet. if you have a real sweet tooth you may want to add 3 extra tablespoons of palmsugar : ))
- mousse
- 200 200 200 grams ripe avocado
- 4 4 4 tablespoons cacao powder
- 6 6 6 big medjoul dates, no pit^
- squeeze of orange juice
- cream
- 110 110 110 grams pistachios, no shell, soaked overnight
