Light Pumpkin Custard

Pumpkin Pie without the crust
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon pumpkin pie spice
- 2 large eggs
- 1 can (15 oz) pumpkin (not pumpkin pie filling)
- 1 can (14 oz) can evaporated fat free milk
Simple Sesame Noodles

- 12 - 16 ounces, fluid Thin Noodles, Cooked And Drained (can use Spaghetti noodles)
- 1/4 cup Soy Sauce
- 2 Tablespoons Sugar
- 4 cloves Garlic, Minced
- 2 Tablespoons Rice Vinegar
- 3 Tablespoons Pure Sesame Oil
- 1/2 teaspoon Hot Chili Oil
- 3 Tablespoons Canola Oil
- 4 whole Green Onions, Sliced Thin
Buttermilk Rum Pound Cake

Cake: Combine butter and sugar and beat well
- 1 cup butter, softened
- 2 cups sugar
- 2 teaspoons rum extract
- 4 eggs
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- Butter Rum Sauce
- 3/4 cup sugar
- 1/3 cup butter
- 3 water
- 11/2 teaspoon rum extract
Chocolate Marbled Banana Bread

Gluten Free, Dairy Free
- 2 large eggs, room temperature
- 5 tablespoons coconut milk
- 1/4 cup applesauce
- 2 tablespoons coconut oil
- 2 very ripe bananas, mashed
- 2 cups Gluten Free Flour Mix
- 3/8 cup agave
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/3 – 1/2 cup GF,DF chocolate chips, Melted
Lazy Day Cassserole

Peel the potatoes, wash them and cut each potato in four pieces
- 12 oz chicken sausage (or Italian Sausage if you prefer)
- 1 1/2 pound potatoes
- 3/4 pound carrots
- 1 bell pepper
- 1 large onion
- 1 fennel bulb
- 2 garlic cloves
- 2 tbsp oil
- 1 1/2 tsp Italian herbs
- 1 cup chicken or vegetable broth
- Salt and pepper
- 4 tbsp balsamic vinegar
Spaghetti Squash with Kale and Chickpeas

Can work as either a main dish or side dish
- 1 spaghetti squash, about 4 pounds
- 3 Tablespoons olive oil + more for drizzling the squash
- Sea salt and freshly ground black pepper
- 1 bunch kale, center rib removed, leaves chopped
- 1 1/2 cups cooked chickpeas (rinsed and drained, if canned)
- 3 cloves garlic, finely chopped
- 1/4 teaspoon crushed red chili flakes or more to taste
- Parmesan or Pecorino-Romano cheese shaved on top (optional)

- Ingredients:
- 1 cup of canola or other light tasting oil
- 1 cup of flour
- 6 eggs
- 1/8 tsp salt
- Icing
- 1 c confectioner’s sugar
- 2 Tbsp milk (or as needed)
- 1 tsp vanilla
Banana Bread

You will never ever use another Banana Bread recipe after trying this one
- 1/2 cup butter
- 3/4 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 3 or 4 bananas mashed
- 1 2/3 cup sifted flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup sour cream
- Optional: 1/4 cup wheat germ, chopped walnuts, semi sweet chocolate chips
- 375 degrees
- 45 - 60 minutes
- Grease & flour loaf pan
