Meyer Lemon Chicken

A Pinterest find! This dish is delicious and tangy; perfect for spring or summer dinners
- 3 boneless, skinless chicken breasts
- 1 1/2 tsp. salt
- 1 1/2 tsp. pepper
- 2 tsp. dried oregano
- 1/2 cup flour
- 1 Tbsp butter
- 1 Tbsp canola oil
- 2 Meyer lemons
- 2 large garlic cloves
- 2 Tbsp chopped Italian parsley
Buffalo Style Meatballs

This meatball recipe is made with ground turkey and chicken and is incredibly flavorful
- 2 large eggs, at room temperature
- 1.5 lb ground turkey*
- 1 lb ground chicken
- 1 cup Panko bread crumbs
- 1/4 cup + 2 Tbsp Buffalo sauce (reserve the 2 Tbsp)
- 1 small onion, finely chopped
- 1/2 cup finely grated Parmesan cheese or Parmesan cheese blend (Romano, Pecorino, etc.)
- 2 Tbsp parsley (either fresh or dried)
- 5 grape tomatoes, finely diced
- 2 cloves of garlic, minced
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 Tbsp olive oil
- I had 1.5 lb of ground turkey left over when I made this recipe. I would imagine you could use the 1 lb amounts sold in most stores and just reduce all the other amounts slightly.

- 1 cup ditalini pasta
- 2 cups frozen peas
- 1/2 cup loosely packed fresh basil leaves
- 1 shallot, peeled and quartered
- 1/3 cup finely shredded Parmesan cheese (powder consistency)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp butter
- 2 oz. thinly sliced prosciutto
- 1/4 cup whipping cream
- Baby salad greens (optional)
Creamy Roasted Cauliflower Sauce

Versatile cauliflower sauce
- 1/2 head garlic
- 5-6 cups cauliflower florets
- 2 Tablespoons Olive Oil
- 2 tablespoons butter
- 6-7 cups vegetable broth or water
- 1 teaspoon salt (more to taste)
- 1/2 teaspoon pepper (more to taste)
- 1/2 cup milk (more to taste)
- Parmesan cheese, grated
Parsley and Parmesan Crusted Pork Tenderloin

Preheat the oven to 375 degrees F (190 degrees C)

- 2 (12 ounce) pork tenderloins
- 1/2 cup bread crumbs
- 1/2 cup chopped fresh parsley
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

Mediterranean Egg Casserole for Two

You can prepare this Mediterranean egg casserole for two the night before and pop it into the oven in the morning w
- 3 eggs
- 3 tablespoons milk
- Pinch salt and pepper
- 3/4 chicken sausage link, cubed into small pieces
- 1/3 cup feta cheese crumbles, heaping
- 1 1/4 marinated artichoke heart, diced
- 2 slices bread cut into 1" cubes (any bread will work)
- You can use any combination of meat, cheese, and vegetable, as long as the meat and cheese are 1/3 cup each and the vegetable is equivalent to 2 green onions.
Grilled Brussels Sprouts

Directions 1. Heat a grill to medium
- 1 pound Brussels sprouts, as uniform in size as possible*
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon dry mustard
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Southern Pimento Cheese

1. Put all but the cheddar cheeses into a blender or food processor and blend together
- 8 oz. extra sharp cheddar cheese, grated
- 8 oz. Vermont cheddar cheese, grated
- 3 oz. cream cheese, softened
- 20 drops Texas Pete (or 1 tsp. Buffalo sauce)
- 1/2 tsp. Spice Islands Beau Monde Seasoning
- 1 T. white vinegar
- 7 oz. jar chopped pimentos with juice
