One-Pot Pasta e Fagioli

Combine the water and 1 1/2 tablespoons salt in a large mixing bowl and stir to dissolve the salt
- For the beans:
- 8 8 8 cups water
- 2 1/2 2 1/2 1/2 tablespoons salt, divided
- 1 1 1 pound dried cannellini beans
- For the soup:
- 1/2 1/2 to 6 1 to 6 pieces) thick-cut bacon , diced (or substitute 1 tablespoon olive oil for vegetarian version)
- 2 2 2 large yellow onions, diced
- 3 3 3 celery stalks, diced
- 4 4 4 garlic cloves, minced
- 1 1 1 cup white wine or water
- 1 1 1 bay leaf
- 1/2 1/2 1/2 pound pasta
- 5 5 5 thyme sprigs
- 10 10 10 ounces baby spinach
- 2 2 2 teaspoons salt
- to to taste
Creamed Spinach for Pasta

Heat bacon fat in skillet, add onion and crushed pepper if using
- 1 Tblsp bacon fat, more if it gets a little too dry
- 1/2 onion, diced
- small pinch crushed red pepper flakes-optional
- 1 big clove garlic, minced
- 1 Tblsp A/P flour
- 1 C milk-cream, half and half, etc.
- Very light grating of fresh nutmeg
- salt and lots of pepper
- 1 (10oz) box spinach, thawed and squeeze some of the liquid out
- cooked pasta
Baked Macaroni & Cheese

Our favorite version. Original recipe calls for saltines, but we like it with Ritz crackers
- 8 oz elbow macaroni, cooked & drained
- 1 sleeve Ritz Crackers, crushed
- 1 t salt
- 1 t pepper
- 8 oz sharp Cheddar, shredded
- 8 oz extra-sharp Cheddar, shredded
- 6 eggs, lightly beaten
- 4 cups milk
Cream Cheese Frosting

Mix well in paddle mixer
- 1 stick butter, softened
- 8 oz cream cheese, softened
- 2 cups confectioner's sugar
- 1 T vanilla
Oven Fried Potatoes

Mix bacon and onion mixture with potatoes and stir well
- 1/2 pound bacon, diced
- 1 onion, chopped
- 3 pounds potatoes, peeled and cut into 1/2 inch chunks or sliced
- Shredded Cheese, optional
Monterey Jack Cheese Soup

In a medium pot bring broth, chiles, tomatoes, onion, and garlic to a boil
- 2 cups chicken broth
- 1 (4 ounce) can diced green chiles
- 1 cup tomatoes, diced
- 1 cup onion, finley chopped
- 1/2 teaspoon garlic, minced
- 6 Tablespoons butter
- 6 Tablespoons all-purpose flour
- 5 cups milk, hot
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 lb Monterey jack cheese, coarsely chopped (about 3 cups - see note)
Double Chocolate Pudding

In a saucepan, stir together sugar, cocoa, cornstarch and salt
- 1 cup sugar
- 6 tablespoons unsweetened cocoa powder
- 1/2 cup cornstarch
- 1/8 teaspoon salt
- 5 1/4 cups milk
- 4 tablespoons butter
- 2 teaspoon vanilla extract
- 1/2 cup chocolate chips
Spinach Calzones

freeze mozzarella for a few minutes first to make it easier to grate

Milk & Honey White Bread

In the bowl of a stand mixer, add yeast, warm milk and honey
- 4 1/2 teaspoons active dry yeast (2 packets)
- 2-1/2 cups warm milk (110° to 115°)
- 1/2 cup honey
- 6 tablespoons butter, melted
- 2 tablespoons butter
- 1 tablespoon kosher salt
- 7 cups all-purpose flour
