Simple Yogurt Crunch

In a medium sized bowl mix together the yogurt, 2 teaspoons of the maple syrup (or honey), and vanilla
- 2 cups plain yogurt (we prefer organic whole milk yogurt)
- 4 teaspoons pure maple syrup or honey, divided
- 1/4 teaspoon pure vanilla extract
- 1 tablespoon butter
- 1 cup sliced almonds and/or pecans
- A few handfuls of mixed berries (frozen or fresh)
Cajun Shrimp Quinoa Casserole

Toss the shrimp and 1 tsp Cajun seasoning together, set aside
- 3/4 lb large shrimp, peeled and deveined
- 4 medium tomatoes, cut into chunks
- 1 jalapeno, seeded and chopped
- 1/2 C chopped sweet onion
- 2 cloves of garlic, minced
- 1 tbsp tomato paste
- 3 tbsp olive oil
- 2 1/2 tsp cajun seasoning
- Salt and pepper to taste
- 2 1/2 C cooked quinoa
- 1 C shredded fontina cheese
- Fresh cilantro for garnish
Mediterranean Frittata

Preheat oven to 375 degrees
- 2 medium onions, halved and thinly sliced
- 2 tablespoons Olive Oil
- 2 garlic cloves, minced
- 1/2 cup chopped roasted sweet red peppers, drained
- 3 cups cubed Italian bread (or whole wheat bread is fine)
- 1/2 cup crumbled feta cheese
- 6 eggs, lightly beaten
- 1/2 cup chicken broth
- 1/4 teaspoon pepper
Garlic Sweet Potato Mash

In a large pot boil sweet potatoes in salted water until tender, drain in a colander
- 2 lbs (4 medium) sweet potatoes, peeled & cubed
- 1 tbsp butter
- 3 cloves garlic, crushed
- 1/2 cup 1% milk
- 2 tbsp light sour cream
- salt and fresh cracked ground pepper, to taste
Easy Cheesy Crackers

Preheat oven to 350 degrees F
- 1 cup whole-wheat flour
- 5 tablespoons cold butter, cut into tablespoon size chunks
- 4 oz. or 1 1/2 cups grated cheddar cheese…the sharper the cheese the cheesier the crackers (Yep, that’s it…only 3 simple ingredients!)

- 1 box yellow cake mix
- 1/4 cup canola oil
- 1 egg, beaten
- 1/4 – 1/2 cup milk
- 1/4 cup rainbow sprinkles

Whole-Wheat Naan

In a large mixing bowl, whisk together the flour, salt, baking soda and garlic powder until well combined
- 2 3/4 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk (any type of milk, unsweetened – I used almond milk)
- 1/2 cup unsweetened apple sauce
- 1 tablespoon garlic powder
- Fresh cilantro for garnish (can also be mixed into the dough)

Thai Turkey Zucchini Meatballs - 30 minutes

In a medium bowl, combine ingredients for meatballs, mix with your hands thoroughly
- Meatballs:
- 2 lbs ground turkey, extra lean
- 1 cup zucchini, shredded & liquid squeezed out
- 1 tbsp fish sauce
- 1/4 cup green onions, finely chopped
- 2 tbsp basil, finely chopped
- 2 tsp ginger, grated
- 2 garlic cloves, grated
- 1 tsp red curry paste
- 2 tbsp coconut milk, light (canned)
- 1/8 tsp hot pepper chill flakes
- Cooking spray (I use Misto)
- Sauce:
- 1 + 1/2 cup coconut milk, light (canned)
- 3 tbsp tomato paste
- 1 tsp red curry paste
- 1 tsp fish sauce
- 1/8 tsp hot pepper chili flakes, or to taste
- 5-6 kaffir lime leaves (optional)
