Looks like I'm not going to get away with not posting my crab cake recipe this holiday weekend
- 1 lb Jumbo Lump Crabmeat
- 1 large egg
- 1/4 cup mayonnaise
- 1/2 teaspoon Dijon mustard
- 1 and 1/2 teaspoons Old Bay Seasoning
- 1 teaspoon lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon of kosher salt
- 1/2 cups fine breadcrumbs made from white bread
- 1 tablespoon chopped parsley

I've been on a cream pie making kick lately and have come up with a "Dream Pie Series"
- 1 single recipe pie crust or store bought crust
- 1 - 8 oz. cream cheese, at room temperature
- 1/2 cup sugar
- Zest of 1 lemon
- 10 oz. lemon curd
- 8-16 oz. Cool Whip (depending on how full you want your pie)

- 1 lb. candy corn
- 16oz jar peanut butter (I used Peter Pan Honey Roasted peanut butter)
- 16oz pkg. chocolate candy coating

Preheat oven to 350 degrees
- TOPPING:
- Pastry for single-crust pie (9 inches)
- 2/3 cup sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground Cinnamon
- 4 medium apples (like Gala, Fiji, Braeburn, Empire) peeled and diced into 1/4 inch pieces
- 1/2 cup all-purpose flour
- 1/3 cup packed brown sugar
- 1/2 cup old-fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1/4 cup salted butter, softened
- DRIZZLE: 1/2 cup caramel topping

- 2 cups sugar
- 1/2 cup 2% milk
- 1 tsp. vanilla

Pie Crust........ Yes, the dreaded Pie Crust! Not everyone is a good crust maker
- 2 cups all purpose flour (I use unbleached for everything)
- 1/2 cup butter, cubed and left in fridge until needed
- 1/2 cup butter flavored Crisco, cubed and left in fridge until needed
- 1 tsp. Kosher salt
- 1 Tbs. sugar
- 1-3 - 1/2 cup ice cold water (I always measure the water then add the ice cubes) On some days it might even take more than a 1/2 cup. I tend to just use a measuring cup and add the water as needed.

- Crustless Cheesecake portion:
- BAKE BETTER BATTER CAKES IN TWO 9 INCH PANS FOLLOWING BOX MIX.
- 30 mini peanut butter cups, CUT IN FOURTHS
- 2 sticks softened butter
- 1 cup granulated sugar
- 4- 8 oz packages cream cheese, softened
- 1- 3 oz. package cook and serve vanilla pudding
- 4 eggs
- 2 tsp baking powder
- Make the caramel
- TWO -14 ounce cans of Eagle sweetened condensed milk
- 10 T. butter
- 80 KRAFT caramels
- Make the caramel in 2 batches dividing above ingredients. Put 1 can sweetened condensed milk, 5 tbsp. butter and 40 caramels in a bowl. Microwave about 3 mins. until smooth-stir as you go.
- Layer cakes: chocolate, cheesecake and repeat
- Frosting Recipe1 2/3 cup Nestle chocolate chips
- 1 1/2 cups heavy cream

- 2 lbs stew meat (or cubed beef)
- 1 (20 oz) can mild red enchilada sauce
- 2 beef bouillon cubes
- 1/2 can refried beans
- 5-7 large flour tortillas (warmed)
- 1 1/2 cups shredded cheddar cheese
