Fry bacon, remove from pan leaving the bacon fat
- I pound ground chicken
- 5 oz. bacon
- 3/4 cup Panko
- 1/2 freshly grated Parmesan
- 1/4 cup finely diced parsley
- 2 green onion finely diced
- 1 clove garlic, minced
- 1 egg
- 1/4 tsp. Salt/pepper

Flatlander Chili

- 2 pounds ground beef
- 1 (46 oz) bottle of tomato juice
- 1 (29 oz) can tomato sauce
- 1 1/2 cups chopped onion
- 1/2 cup chopped celery
- 1/4 cup chili powder
- 2 teaspoons cumin
- 1 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon white sugar
- 1/8 teaspoon cayenne pepper
- 2 cups canned red beans _ rinsed and drained
Classic Chili

Add olive oil to a large soup pot and place over medium-high heat for two minutes
- 1 tablespoon olive oil
- 1 medium onion diced
- 1 pound ground beef
- 2 1/2 tablespoons chili powder
- 2 tablespoons cumin
- 2 tablespoons sugar
- 2 tablespoons tomato paste
- 1 tablespoon garlic powder
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 1/2 cups beef broth
- 1 (15 oz.) petite diced tomatoes
- 1 (8 oz.) tomato paste
Wild Wings Chicken Wings

Toss chicken wings with olive oil
- Chicken wings
- 1 cup Frank’s Hot Sauce
- 1/3 cup oil
- 1 tsp sugar
- 1/2 tsp garlic powder
- 1/2 tsp Worcestershire Sauce
- 1 egg yolk
- 1/2 tsp water
- 2 tsp. cornstarch
Vanilla Ice.Cream base

In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves
- 2 cups heavy cream
- 1cup whole milk
- 2/3 cup sugar
- 1/8 teaspoon salt
- 6 large egg yolks
- Your choice of flavoring
Shrimp Parmesan

The original recipe gave a recipe for the tomato sauce
- For the shrimp:
- For the Mozzarella
- 1 cup panko crumbs
- 2 eggs, beaten
- 3 tablespoons all-purpose flour
- 4 slices fresh mozzarella, about 1/4 inch thick
- Salt and pepper
- 10 large shrimp, peeled and deveined
- 1 tablespoon garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/3 cup dry white wine - I would substitute chicken broth
- 2 tablespoons chopped fresh parsley
- Juice of 1/2 lemon
- Salt to taste
- Garnish: shredded Parmesan

Macaroni and Cheese

This recipe is a take on Paula Deen's recipe for macaroni and cheese
- 2 1/2 cups uncooked elbow macaroni
- 4 tablespoons butter, cut into pieces
- 2 1/2 cups (12 ounces) grated sharp Cheddar cheese (Use the brick cheese because the already grated cheese contains flour and will make the mac and cheese "curdy")
- 1/2 cup sour cream
- 1 (10 ounce) can condensed Cheddar cheese soup
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 teaspoon dry mustard
