The Girl's Favorite Quiche Lorraine

Sprinkle bacon, cheese and onion in pie shell
- frozen pastry shell (9-inch)
- 12 slices fried bacon
- 1 c. Swiss cheese, shredded
- 1/3 c. chopped onion
- 4 eggs
- 2 c. half and half
- 3/4 tsp. salt
- 1/4 tsp. pepper
Flourless Chocolate Torte

For best results when beating egg whites, start with a spotlessly clean bowl and beater
- Unsweetened cocoa powder for dusting
- 15 oz. bittersweet choc., finely chopped
- 18 Tbs. (2 1/4 sticks) unsalted butter, cut into small pieces
- 7 egg yolks
- 9 Tbs. granulated sugar
- 1 1/2 Tbs. dark rum or brewed espresso (optional)
- 1 1/2 tsp. vanilla extract
- Pinch of salt
- 5 egg whites, at room temperature
- 3 cups raspberries
- 10 x sugar for dusting
Brussels Sprouts w/ Pancetta

Add butter to pan and cook pancetta til golden brown
- 1/4 lb pancetta, cubed
- 1 lb fresh brussels sprouts
- 3 pats butter
Blueberry Poundcake

Preheat oven to 350 degrees 1
- GLAZE:
- 2 c. sugar
- 1/2 c. light butter
- 1/2 of 8oz. cream cheese
- 4 Lg. Eggs
- 3 c. flour
- 2 c. fresh/frozen blueberries
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 8oz. carton lemon low-fat yogurt
- 2 tsp. vanilla extract
- cooking spray
- 1/2 c. 10x sugar
- 4 tsp. lemon juice
- OR:
- Store bought vanilla icing
Chocolate Cake

Serves: Recipe makes 2 - 9" cakes, or 3 - 8" cakes (I made 3)
- 1 3/4 cups all purpose flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 eggs
- 1 cup strong coffee (it can be hot, warm or cool)
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 tbsp vanilla
Marshmallow Fruit Dip

- 1 jar marshmallow fluff
- 1 pkg. cream cheese
- 1 tsp. orange juice

- 4 Tbsp. flour
- 1 c. chicken stock or milk
- salt and pepper
- 2 c. chopped chicken

Heat oven to 400. Beat butter and sugar til fluffly
- 2 sticks softened butter
- 6 T sugar
- 3 lg egg yolks
- 5 C sifted flour
- 2 1/4 T baking powder
- 1 1/2 C buttermilk
- mandarin oranges
- crazins soaked in water
Green Beans w/ Lemon, garlic and Parm cheese

A mince of lemon zest, garlic and parsley, gremolata is the traditional final tease of Milan’s osso buco
- Good tasting extra-virgin olive oil
- 3 pounds green beans, stem ends trimmed
- Salt and fresh-ground black pepper
- 1 cup water
- 5 large garlic cloves, crushed
- 1/3 cup water
- Shredded zest of 2 large lemons (organic preferred; after all, you are eating the entire rind)
- 1 tight-packed cup Italian parsley leaves
- Salt and fresh ground black pepper to taste
- 1-1/2 cups coarsely-grated Parmigiano-Reggiano cheese
Cranberry/Orange Bread

- 1 c. fresh or frozen cranberries, chopped
- 1/2 c. chopped nuts
- 1 T. grated orange peel
- 2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 t. baking powder
- 1 t. salt
- 1/2 t. baking soda
- 2 T. butter
- 3/4 c. OJ
- 1 egg, beaten
