Orzo w/ Artichoke Pesto and grilled corn

cook orzo til firm to bite
- For Orzo:
- 1 lb orzo pasta
- 1 T olive oil
- 2 ears corn, husked
- 2 C cherry tomatoes, cut in half
- 1 1/2 C grated parm
- salt/pep
- For Pesto:
- 12 oz frozen artichokes, thawed, reserve one cup
- 1/2 C walnuts, toasted*
- 1/2 C flat leaf parsley leaves
- 1/2 C fresh organo
- zest of 1 lg lemon
- 1/4 C lemon juice
- 1 clove garlic, smashed
- 1/2 t salt
- 1/2 t pepper
- 3/4 C olive oil

- 1 1/2 ounces Grey Goose
- 2 ounces Cranberry
- Splash of Cointreau
- 1/3 rd squeezed fresh lime.
Spinach Dip

Mix all ingredients and chill overnight
- 1 c. mayonnaise
- 1 c. sour cream
- 1 pkg. frozen chopped spinach
- 1 envelope Good Seasons Italian dressing mix
Chocolate Buttercream Icing

Beat all ingredients until the icing is nice and fluffy
- 1 1/2 cups butter (not margarine)
- 3 3/4 cups icing sugar
- 9 tbsp cocoa powder
- 6 tbsp milk
- 1 1/2 tsp vanilla
Cinnamon Churros w/ Mexican Choco Dipping Sauce

In large dutch oven, using high heat thermometer, bring oil to 375 degrees
- Choco sauce:
- 8 C oil, for frying
- 1 1/2 C Mexican Chocolate
- 3/4 C heavy cream
- Churros:
- 3 T unsalted butter
- 2 T granulated sugar
- 1/4 t kosher salt
- 1 C flour
- 3 eggs
- 1 C granulated sugar
- 2 t ground cinnamon

- 1 pound green beans
- 1 sweet red pepper
- 1 sweet yellow pepper
- 3 garlic cloves, peeled and finely sliced
- 3 tablespoons evoo
- Hot red pepper flakes
- Black pepper
- 1 teaspoon fresh thyme
- Sea salt
- Zest of 1 lemon
Devil's Food Pound Cake

Duncan Hine's cake mix
- Glaze:
- 1 pkg Duncan Hine's Devil's food cake mix
- 1 (3.4 oz) instant choco pudding mix
- 4 lg eggs
- 1 1/4 C water
- 1/2 C veg oil
- 1/2 C duncan hines frosting (van or choco)

- 1 lb. spiral macaroni
- 1 (16 oz) bottle Seven Seas Italian dressing
- 1 pt. cherry tomatoes
- 1 head broccoli (raw), cleaned and cut
- 1 green pepper
- 1 red pepper
- 1 cucumber
- 2 to 3 Tbsp. McCormick's Salad and Vegetable Supreme
Make-Ahead Breakfast Bake

- 2 slices bread, cut into cubes
- 1 c. shredded sharp Cheddar cheese
