Lemon Cream Cheese Bars

Pre-heat oven to 350. Mix crust ingredients and press into 9x9 greased pan
- Crust:
- 1 c. flour
- 1 stick butter
- 1/4 c. powdered sugar
- Filling:
- 8 oz. cream cheese
- 1/2 c. sugar
- 1 tsp lemon juice
- zest from lemon
- 1 tsp vanilla
- 1 tbsp sour cream
- Lemon Filling:
- 1 c. sugar
- 2 tbsp lemon juice
- zest from lemons
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
Cheesy Broccoli Orzo

- 1 cup orzo
- 1-1/2 cups chopped broccoli florets
- 1/4 cup shredded cheddar cheese

- 1/4 cup tomato sauce
- 2 tablespoons red wine vinegar

- 2 pounds fresh shrimp, peeled and deveined
Balsamic Marinated Tomato Mozzerella Salad

Mix together first five ingredients for dressing and toss in cheese and tomatoes
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 teaspoon salt
- black pepper

Blueberry Oat Bran Muffins

Preheat the oven to 180°C (360°F) and line a 12-muffin tray* with paper liners
- 1 cup oat bran
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- a good pinch salt
- 1/2 cup sugar
- 1 cup blueberries (no need to thaw them if frozen)
- 1 cup plain yogurt (buttermilk can be substituted)
- 2 tablespoons vegetable oil
- 1 teaspoon pure vanilla extract
- 2 eggs, at room temperature
- Makes about 12 muffins.
