Here's another "what the heck am I going to make dinner" inventions! I used ground beef in this recipe, but you co...
- 1 to 1 1/2 lbs ground beef – I like the extra lean, you could substitute ground turkey or chicken as well.
- 1 white onion chopped
- Drizzle of Olive oil
- 4 Tbls butter
- 4 rounded Tbls white flour
- 1 tsp. Tony Chachere’s Seasoning.
- 1 1/2 cup milk
- Chicken broth – approximately 2 – 3 cups.
- 1 pkg rotini, cooked and drained (I like the Bertolli brand – but use your favorite)
Cuban Flank Steak with Avocado and Tomato Salad

This was dinner last night
- For the Mojo Sauce -
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 2 Tbls orange juice
- 4 garlic cloves
- 2 Tbls water
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- Hand full of fresh cilantro
- 1 flank steak
- 1 avocado, chopped
- 1 tomato, chopped
- 4 Tbls finely chopped red onion
White Chili

I've adapted this from the Cooking Light 2009 cookbook
- 2 tsp olive oil
- White onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 5 tsp green Tabasco sauce ( or to taste)
- 1/2 tsp salt
- 1 1/4 lb boneless skinless chicken breast
- 2 Tbls cornmeal
- 2 cans Cannellini beans, rinsed and drained (15 oz size)

There is a fabulous restaurant in Portland called Mother’s
- Filling Ingredients:
- 1 pound uncooked spaghetti
- 1 pound ground sirloin
- 1/2 cup finely chopped onion
- 3 garlic cloves, minced
- 1/2 cup dry white wine
- 1 – 15oz can tomato sauce
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp black pepper
- White Sauce Ingredients:
- 3 Tbls all purpose flour
- 1/2 tsp salt
- 3 cups 2% reduced fat milk
- 2 large eggs, lightly beaten
- 2 large egg whites, lightly beaten
- 5 Tbls white cheddar cheese ( I believe I used jack cheese the last time I made this)
- Cooking spray
- 1/4 cup grated pecorino Romano cheese
Chickpea Salad with Cilantro Dressing

This recipe is from the Cooking Light 2009 Annual Recipes cookbook
- 2 c. chopped fresh cilantro
- 2 Tbls. Extra Virgin Olive Oil
- 1/2 tsp. grated lime rind
- 2 Tbls. fresh lime juice
- 1/4 tsp salt
- 2 garlic cloves
- 2 pickled jalapeno pepper slices
- 1/4 c chicken broth
- 1/2 c chopped seeded peeled cucumber
- 1/2 c thinly sliced radishes
- 1/4 c chopped celery
- 2 – 15oz cans chickpeas (garbanzo beans) rinsed and drained
- 12 boston lettuce leaves
Mushroom-Barley Side Dish

This is a 24-hour fitness recipe
- 1 small leek, remove outer leaves and rinse well. Finely chop
- 1 tsp olive oil
- 1 pound fresh mushrooms, sliced
- 1 clove garlic, minced
- 3/4 cup pearl barley
- 1 2/3 cup vegetable or beef broth
- 1/3 cup dry white wine
- Grated Parmesan for garnish, Salt & Pepper to taste.
Creamy Chili Con Carne Dip

- 1 can "no bean" chili (I like Hormel)
- 8 oz of cream cheese (I use Philadelphia 1/3 less fat)
- 2 tsp chili powder
- 1/4 tsp cayenne pepper

Shrimp Ceviche

This shrimp ceviche recipe is a winner
- 1 1/2 pounds fresh raw shrimp; shelled, cleaned and deveined
- 2 large tomatoes; seeded and chopped
- 3 limes
- 2 lemons
- 1 cup cilantro, chopped
- 1 serrano chili, seeded and finely chopped
- 1/2 medium cucumber; peeled, seeded and chopped
- 1/2 cup red onion, chopped
- 3 tablespoons tomato sauce
Rosemary Pork Tenderloin with Olives and Onions
