Chicken Fried Rice

Combine chicken, soy sauce and 1/2 teaspoon salt
- 1 cup diced, cooked chicken
- 1 cup uncooked rice
- 2 1/2 cups chicken broth
- 1/4 cup chopped green pepper
- 2 eggs, slightly beaten
- 1 tablespoon soy sauce
- 1/3 cup oil
- 1/2 cup chopped onion
- 1/4 cup thinly sliced celery
- 1 cup finely shredded lettuce or Chinese cabbage
Beer-Braised Carrots

The combination of beer, caraway and brown sugar gives the carrots a taste similar to rye bread
- The slicing instructions result in very thick pieces, so they don’t overcook in the time it takes for the beer to cook away. Guarnaschelli uses Heineken, but I used Harp and it worked great.
- 4 tablespoons unsalted butter
- 1 teaspoon coriander seeds
- 1/2 teaspoon caraway seeds

- 1 lb raw shrimp, (26-30 per pound), peeled and deveined
- 1 cup reduced-sodium chicken broth
- 1 tsp cornstarch
- 2 Tbs lemon juice
- 2 Tbs chopped fresh parsley
