- 1-2 Tablespoons Spicy Ranch Dressing
- 10 oz can Rotel Mexican Lime & Cilantro dice tomatoes, drained
- 1/4 -1/2 cup red onions, diced
- 2 chicken breast, seasoned, cooked & shredded
- 1 cup Colby jack cheese or Mexican blend cheese, shredded
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1/2 tablespoon oregano
- salt and pepper to taste

Fluffy and moist mandarin orange and pineapple cake - it's like heaven! Easy to make, great for any occasion
- CAKE:
- 2 large cans mandarin oranges
- 1 yellow cake mix
- 1 egg
- 1/4 cup oil
- CAKE TOPPING:
- 1 tub cool whip
- 1 box vanilla pudding
- 1 can crushed pineapple, drained
~EASY~ RED VELVET CINNAMON ROLLS

EASY PEEZY & DANGER~LICIOUS Red Velvet Cake Mix Cinnamon Rolls
- adapted from Duncan Hines Cake Mix Cinnamon Rolls
- These take about 3 hours from start to finish, mostly inactive prep time.
- Makes 24 rolls
- 1 box of Duncan Hines Signature Red Velvet Cake Mix
- 2 envelopes (1/4 oz each) of Active Dry Yeast
- 2 1/2 cups of warm water or whole milk (I've found that using milk instead of water gives the rolls a better texture)
- 1 teaspoon of kosher salt
- 1 teaspoon of vanilla extract
- 5 cups of all-purpose flour
- Cinnamon Filling
- 1 stick of softened butter – you can add another stick of butter if you want them really gooey
- 1 cup of packed dark brown sugar
- 1 cup of granulated white sugar
- Cinnamon
- Cream Cheese Frosting
- 2 sticks of softened butter
- 3 cups of powdered sugar
- 1 teaspoon of pure vanilla extract
- Pinch of kosher salt
- 2 packages of softened cream cheese – 8 ounces
FABULOUS PEACH CAKE

- CAKE:
- 1 large can sliced peaches, drained and mashed (I used 2 regular cans since that is all I had at the time) You could also use fresh peaches.
- 2 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking soda
- ICING:
- 3/4 cup sugar
- 3/4 regular sized can of evaporated milk
- 1 stick butter or margarine
- 1 cup coconut (I used a little more than a cup of coconut)
- 1 cup nuts
- Boil everything but the nuts on top of the stove until it thickens, remove from heat, stir in nuts and spread on cooled cake.
