Tomatillo Chicken Soup

1.Heat oil over high heat in a large saucepan or Dutch oven
- 1 skinless, boneless chicken breast halves - pounded thin
- 1 tablespoon and 1-1/2 teaspoons olive oil
- 1/2 onion, chopped
- 1-1/2 cloves garlic, minced
- 1/2 pound chopped tomatillos
- 1 jalapeno peppers, seeded and minced
- 2 cups chicken stock
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon hot pepper sauce
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons sour cream (optional)
- salt to taste
- ground black pepper to taste
Swedish Meatballs

- 2 slices fresh white bread
- 1/4 cup milk
- 3 tablespoons olive oil, divided
- 1/2 cup finely chopped onion
- A pinch plus 1 teaspoon kosher salt
- 2 pound ground beef
- 2 large egg yolks
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground allspice
- 1/4 teaspoon freshly grated nutmeg

Chocolate Thumbprint Kiss Cookies

Chocolate Thumbprint Kiss Cookies are best made with Hot Cocoa Creme filled Hershey's Kisses or something similar
- 1 stick butter
- 2/3 cup granulated sugar
- 1 egg yolk
- 2 tablespoons milk
- 3 teaspoons vanilla extract
- 1 cup flour
- 1/3 cup Hershey's cocoa
- 1/4 teaspoon salt
- 4 ounces semi-sweet mini morsels
- a sprinkling of granulated sugar for rolling
- powdered sugar for dusting
- 30 Hershey's Kisses, unwrapped
Oatmeal Cookies

Preheat oven to 350F Beat together in a small bowl: butter, brown sugar, and sugar
- 1 stick butter
- 1/2 cup firmly packed brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 tsp vanilla
- 3/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 1/2 cup rolled oats
Hasselback Potatoes

Preheat the oven to 425˚F
- Potato
- Garlic, minced
- Butter, melted
- Olive oil

Asian Spinach/Basil Chicken Stir-Fry

Heat a wok or skillet over med-high heat, add the oil and heat until hot but not smoking
- 1 lb. skinless, boneless chicken breast, thawed slightly
- 1 tbsp vegetable oil
- 3 cloves garlic, finely chopped
- 1 cup cabbage, chopped
- 1 small fresh Thai chili (or Serrano pepper), cut in slices (wash your hands after)
- 1/4 cup chicken or beef broth
- 2 tsp fish sauce (naam pla)
- 2 tsp sugar
- 2 tsp soy sauce
- fresh black pepper
- 1 1/2 cups Malabar spinach, holy basil or Asian (Thai) basil, washed and patted dry
- 2 to 3 cups steamed rice or cooked noodles
Sweet and Spicy Shrimp

1. In a wok or similar pan, add olive oil, heat on medium or medium-low heat until hot 2
- 1 lb small or medium shrimp (peeled and deveined)
- Olive oil to coat pan
- 3 cloves minced garlic
- 1-2 " piece of fresh ginger, peeled and chopped
- 1 red bell pepper, chopped into slices
- 1/2 medium onion, chopped
- 1 tsp ground ginger
- 1 tsp honey
- 1/2 tsp sea salt
- 1 tsp black pepper
- Lime juice of 1 lime
- 1/2 tsp red pepper flakes
- ~4.5 oz (1/3 can) coconut milk
Scalloped Potatoes

Nana's recipe; haven't tried it yet
- 8-10 small red potatoes (others would cook up too mushy and gritty, so they are supposed to specifically be red potatoes)
- Shredded mild cheddar cheese (16 oz should do). The better quality the cheese, the better.
- Half and half (a pint or half pint should do)
- Salt
- Flour (for thickness and to help absorb some of the half-and-half)
- Butter (a generous amount... up to 2 sticks, possibly), cut into very thin slices
Broccoli with Garlic Butter and Cashews

Place the broccoli into a large pot with about 1 inch of water in the bottom
- 1 1/2 pounds fresh broccoli, cut into bite size pieces
- 1/3 cup butter
- 1 tablespoon brown sugar
- 3 tablespoons soy sauce
- 2 teaspoons white vinegar
- 1/4 teaspoon ground black pepper
- 2 cloves garlic, minced
- 1/3 cup chopped salted cashews
Spicy Barbeque Sauce

- 4 tbsps vinegar
- 2 tbsps soy sauce
- 2 tbsps dry sherry
- 7 oz (2/3 c) tomato paste
- 1 tsp chili powder
- 3 garlic cloves, minced
- 1 jalapeno pepper
- 2 tbsps sunflower oil
- 1 dried red chili, chopped into pieces
- 1 lb steak, cut into thin pieces (or substitute add'l 1/2c beef broth)
- salt
- 1/2 c beef broth
- Stevia
- Liquid hickory smoke
