A charlotte alternates sponge cake and mousse, custard or cheesecake
- I'm offering my charlotte tiramisu recipe. Keep in mind this was made for work so I could not use alcohol. Once complete the inside is a beautiful marbling of cream and chocolate.
- 8 egg yolks
- 1 cup sugar
- 1/2 cup dark rum (I substituted with rum extract)
- 1/2 cup cold water
- splash of Amaretto (I substituted with almond extract)
- 2 1/2 lbs. mascarpone
- 36 ladyfingers
- 2 cups coffee reduction or espresso (I used instant espresso powder without the kahlua)
- splash Kahlua
- chocolate shavings (optional)

This is an amazing dish and a must have for any summer day

My little English muffin

From little muffins into big loaf comes English muffin bread but with half the work
- 5-1/2 cups Warm (not Hot) Water
- 2 Tablespoons Kosher Salt
- 2 Tablespoons Sugar
- 3 packages (1/4 Oz. Packet) Instant Yeast
- 11-1/2 cups All Purpose Or Bread Flour (I Like To Do A Half And Half Blend Most Times.)
- Melted Butter For Brushing The Bread Midway Through Cooking And Then Again After They're Done Cooking
Victorian Sponge Cake

Sometimes the simplest of things turns out to be something you'll never forget
- Keeps and freezes well. Makes 2 cakes
- 4 eggs
- 8 oz caster sugar
- 8 oz butter
- 8 oz self-raising flour (SRF is a flour that has a leavening agent – baking powder – and salt added to it during packaging.) For a chocolate sponge use only 4oz and add 4oz of sieved cocoa
- 1 teaspoon vanilla extract

Invasion of the Cheesecake Factory recipe snatcher
- CRUST:
- 1/4 cup pecans chopped fine
- 1/4 cup walnuts chopped fine
- 1/4 cup almonds chopped fine
- 3/4 cup crushed vanilla wafers
- 2 tablespoons melted butter
- FILLING:
- 1 1/2 lbs cream cheese (do not use low fat)
- 1 1/3 cups sugar
- 5 large eggs
- 16 ounces sour cream
- 1/4 cup flour
- 2 teaspoons vanilla extract
- 2 teaspoons lemon juice (or try using 1 tsp of lemon zest)

Once you taste this pie you'll know why no other custard pie will do
- For the Crust
- 1-2 packs of store bought pie dough or enough shortbread pastry dough for desired thickness.
- Buttery Shortbread Pastry Dough
- 9 oz. (2 cups) bleached all purpose flour
- 7 oz. (14 Tbs.) chilled unsalted butter, cut into 1-inch pieces
- 1 large egg, lightly beaten
- 2 Tbs. granulated sugar
- 1 Tbs. chilled heavy cream
- 2 tsp. fresh lemon juice
- 1 tsp. table salt
- For Custard pie
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups half-and-half
- 1/2 cup (1 stick) butter
- 1/4 cup packed light brown sugar
- 1 vanilla pod split and scraped
- Ground cinnamon for sprinkling

- For Fried coconut topping

Crock Pot Cakes

Did you know that you could slow cook yourself a cake? You don't need to buy special pans, racks or inserts
- Ingredients:
- 1 cup graham cracker crumbs
- 2 tbsps brown sugar
- 3 tbsps melted butter
- 16 ozs cream cheese
- 3/4 cup white sugar
- 2 large eggs
- 1/4 cup heavy cream
- 1 tsp vanilla
- 1 tbsp flour
- 1 - Find a heat-resistant dish that will fit into your crock pot for the cheesecake. You will need it to create a water bath inside the crock pot.
- 2 - Pour 1 cup of graham cracker crumbs into a medium bowl. Add melted butter and brown sugar and stir into a crumbly mixture. Press the crumbs into the bottom of the heat-resistant dish.
- 3 - In a separate bowl, beat the cream cheese, sugar, eggs, cream, vanilla, and flour. Pour the cheese mixture on top of the crust.
- 4 - Add 1/2 to 1 cup of water to the bottom of your crock pot. Lower the dish inside, being careful to not to splash the water.
- 5 - Cover and cook on high for 2-3 hours, checking on it after every hour. The cheesecake is done when the edges are no longer shiny and have set. It should be semi-firm to the touch.
- 6 - Let the cheesecake cool in the crock pot for up to an hour, and then transfer your cheesecake to the refrigerator to let it set. Chill for at least 2 hours before cutting and serving.
Moo la la 3 Milk Cake

A Tres Leches Cake is a sponge cake soaked in three kinds of milk until the cake cannot soak any more up
- This is another sponge cake recipe, so refer to the Victorian sponge cake recipe within my collection. Once the sponge is baked and cooled, pierce the cake with a fork to allow for the milk to settle in.
- Some bakers set their cake in a springform pan lined with linen before pouring the milk...I'm one of those.
- 3 Milk Ingredients
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 fluid ounce) can evaporated milk
- 1 1/2 cups heavy whipping cream
- flavored extract
- Dulce de leche Ingredients
- 1 quart whole milk
- 12 ounces sugar, approximately 1 1/2 cups
- 1 vanilla bean, split and seeds scraped
- 1/2 teaspoon baking soda
Chipotle inspired burrito

This is pretty dang close to my favorite burrito that Chipotle sells
- Sour cream
- Corn and black bean salsa (refer to my Mexican cookbook for recipe)
- Salsa (your favorite store bought will do)
- Honey Vinaigrette (store bought) marinated shredded lettuce
- White cheddar and jack shredded cheese (preferred but any blend will do)
- Chopped marinated chicken/beef (refer to my Mexican cookbook for recipe)
- Lime cilantro rice (refer to my Mexican cookbook for recipe)
