A charlotte alternates sponge cake and mousse, custard or cheesecake

  • I'm offering my charlotte tiramisu recipe. Keep in mind this was made for work so I could not use alcohol. Once complete the inside is a beautiful marbling of cream and chocolate.
  • 8 egg yolks
  • 1 cup sugar
  • 1/2 cup dark rum (I substituted with rum extract)
  • 1/2 cup cold water
  • splash of Amaretto (I substituted with almond extract)
  • 2 1/2 lbs. mascarpone
  • 36 ladyfingers
  • 2 cups coffee reduction or espresso (I used instant espresso powder without the kahlua)
  • splash Kahlua
  • chocolate shavings (optional)

  • 1-2 packs of store bought pie dough or enough shortbread pastry dough for desired thickness.
  • Buttery Shortbread Pastry Dough
  • 9 oz. (2 cups) bleached all purpose flour
  • 7 oz. (14 Tbs.) chilled unsalted butter, cut into 1-inch pieces
  • 1 large egg, lightly beaten

  • 3/4 cup granulated sugar

Did you know that you could slow cook yourself a cake? You don't need to buy special pans, racks or inserts

  • Ingredients:
  • 1 cup graham cracker crumbs
  • 2 tbsps brown sugar
  • 3 tbsps melted butter
  • 16 ozs cream cheese
  • 3/4 cup white sugar
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 tsp vanilla
  • 1 tbsp flour
  • 1 - Find a heat-resistant dish that will fit into your crock pot for the cheesecake. You will need it to create a water bath inside the crock pot.
  • 2 - Pour 1 cup of graham cracker crumbs into a medium bowl. Add melted butter and brown sugar and stir into a crumbly mixture. Press the crumbs into the bottom of the heat-resistant dish.
  • 3 - In a separate bowl, beat the cream cheese, sugar, eggs, cream, vanilla, and flour. Pour the cheese mixture on top of the crust.
  • 4 - Add 1/2 to 1 cup of water to the bottom of your crock pot. Lower the dish inside, being careful to not to splash the water.
  • 5 - Cover and cook on high for 2-3 hours, checking on it after every hour. The cheesecake is done when the edges are no longer shiny and have set. It should be semi-firm to the touch.
  • 6 - Let the cheesecake cool in the crock pot for up to an hour, and then transfer your cheesecake to the refrigerator to let it set. Chill for at least 2 hours before cutting and serving.

  • This is another sponge cake recipe, so refer to the Victorian sponge cake recipe within my collection. Once the sponge is baked and cooled, pierce the cake with a fork to allow for the milk to settle in.
  • Some bakers set their cake in a springform pan lined with linen before pouring the milk...I'm one of those.

  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 1/2 cups heavy whipping cream

  • 1 quart whole milk
  • 12 ounces sugar, approximately 1 1/2 cups
  • 1 vanilla bean, split and seeds scraped
  • 1/2 teaspoon baking soda
