- 1 Ribeye Steak (2-inch thickness)
- 1 tablespoon Kosher Salt (plus more for mushrooms)
- Olive Oil
- 2 tablespoons Butter (plus more to serve or beef tallow)
- 3 sprigs Rosemary tied with 1 small bunch Thyme
- 1 pound Wild Mushrooms or Button Mushrooms
- 1 tablespoon Red Wine Vinegar
- 2 small Shallots (quartered)

Heat a large nonstick skillet over medium high heat and coat with olive oil
- Sauce:
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 4 (8-ounce) portions red snapper fillets
- Salt and pepper
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 3 cloves chopped garlic
- 1 cup dry white wine
- 1 (14-ounce) can diced tomatoes in juice
- 3 tablespoons capers
- 1/4 cup chopped flat-leaf parsley, a couple of handfuls

Trim as much fat as you can from roast, and cut if necessary to fit into Crockpot
- 3-4 pound boneless chuck roast
- 1-2 T steak rub (I used Szeged Steak Rub.)
- black pepper to taste
- 1-2 T olive oil (depends on your pan)
- 1/4 cup water to deglaze pan
- 2-3 large onions, peeled and thickly sliced
- 1 cup beef stock, reduced to 1/2 cup (can use a can of beef broth, but be sure to reduce it)
- 1/2 cup balsamic vinegar (I used Fini Balsamic Vinegar)
- 1/2 cup tomato sauce (You can substitute one can diced tomatoes, drained well. I might puree the tomatoes.)
