Lemongrass Chicken

Easy and fast to prepare Lemongrass Chicken for grilling
- 500 g Chicken breast meats
- 3 Tbl Honey
- 2 Tbl Light Soya Sauce
- 1 tsp Fresh Turmeric - grind/pound finely
- Salt to taste
- Enough Lemongrass for grilling chicken meat
Soya Sauce Chicken

A simple, sweet and tangy Malay style of cooking Chicken in soya sauce with aromatic spices
- Spices for frying:
- 5 pcs Chicken meat - clean and pat dry (about 300 g - 450 g)
- 3 nos Big Onions - sliced
- 2 cloves Garlic - sliced
- 10 ml Thick Soya Sauce
- 5 ml Sweet Soya Sauce (Ketjap Manis)
- 1 nos Large Red Tomato - quartered (or more if you like)
- Salt and Sugar to taste
- 2 pcs Cloves
- 1 pc Cinnamon stick (about 4 cm)
- Few pieces Cardamom (I used 4 nos)
- Oil for frying
Stir-fried Mixed Colored Long Beans With Prawns & Cashew Nuts

- 100 g Green Long Beans
- 100 g Red/Purple Long Beans
- 100 g Prawns - cleaned and deveined
- 50 g Cashew Nuts - toasted without oil
- 4 pips Garlic - minced
- 1/2 cube Chicken Stock or 1/2 cup homemade stock
- Oil for frying

Thai Pumpkin and Chicken Curry

Easy and fragrant Thai Pumpkin and Chicken Curry with Virgin Coconut Oil
- To be blended into paste:
- 1 small Pumpkin (any suitable pumpkin, about 500 g - 700g)
- 500 g Boneless Chicken Thighs - cut into bite-sized pieces
- 1/2 cup Thai Basil - firmly packed & chiffonade
- 2 nos Shallots - chopped coarsely
- 3 cloves garlic - chopped coarsely
- 3 Tbl Thai Red Curry Paste
- 2 Tbl Water
- 300 ml Fresh Coconut Milk (canned or packed can be use)
- 2 Tbl Fish Sauce (Nam pla)
- 1 nos Lime (1/2 Lemon) - extract the juice only
- 2 tsp Palm sugar or Light Brown Sugar
- 3 Tbl Virgin Coconut Oil or Cooking Oil of your choice
Pine 'n' Coconut Pancake Rolls

- Filling:
- 300 g Pine Nuts
- 100 g Caster Sugar
- 1 whole Coconut ~ split into halves & grated or scraped coarsely
- Pancake:
- 180 g Flour
- 250 ml Coconut Milk
- 150 ml Water
- 1/2 tsp Salt
- 1 Tbl Oil
- 1 Large Egg
Tomato Chicken Stew

This is a mildly spiced Malay style stew
- Spices (ground/blend finely):
- 500 g Chicken, chopped into 5 cm pieces (or drumsticks/breast meats)
- Pinch of Salt & Tumeric powder
- 1/2 cup Oil (for shallow frying)
- 2 nos Onions, sliced
- 1 small can Tomato Purée
- 2 nos Tomatoes, quartered
- 1 tbl Sugar or to taste
- 1 tbl Salt or to taste
- Some Water
- 6 nos Shallots
- 3 cloves Garlic
- 6-10 Red Chillies, seeded
- 1 pc Lemongrass (use the plump white portion only)
- 2 cm knob of Ginger, skinned

- 30 g Galangal
- 20 g Palm Sugar
- 1 tsp Belacan
- 2 stalks Coriander leaves ~ roughly chopped (approx. 20 g - 40 g)
- 2 nos Red Chillies ~ cut into halves
- 2 nos Geen Chillies ~ cut into halves
- 1 tsp Cumin seeds
- 1 tsp White Pepper
- 1 tsp Chilli Powder
- 3 pcs Kaffir Lime leaves
- 250 ml Evaporated Milk

- Salt and sugar to taste
