- FROSTING:
- 2 1/4C powder sugar
- 1/4C butter, room temp
- 1/2 tsp pure vanilla
- 1-2 Tbsp milk, or more if need

Preheat oven to 400. Bake sweet potatoes 45-60 minutes or until easily pierced with a fork
- 6 medium sweet potatoes
- 1 c white or brown rice
- 2 Tbsp olive oil
- 1 small onion, diced
- 1 c diced bell pepper, any color
- 2 cloves garlic, minced
- 3/4 tsp kosher salt
- 1/2 tsp grd black pepper
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp grd coriander
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper or
- more to taste
- 1 can (15oz) black beans,
- drained and rinsed
- 1 c Mexican styled shredded
- cheese
