Parmesan-Peppercorn Ranch Dressing

Whisk well together all ingredients and chill for at least 24 hours before using
- 2 teaspoons finely chopped onions
- 2 teaspoons white vinegar
- 1 1⁄4 cups mayonnaise
- 1 ⁄4 teaspoon salt
- 1 ⁄2 teaspoon garlic powder
- 1 ⁄4 cup sour cream
- 1 teaspoon lemon juice
- 1 ⁄4 cup half-and-half
- 1 teaspoon Worcestershire sauce
- 1 1⁄2 teaspoons ground black pepper
- 2 -3 teaspoons cracked peppercorns
- 1 ⁄4-1⁄2 cup freshly grated parmesan cheese

- 2 cloves garlic cloves, finely grated
- 1/4 cup olive oil
- 1/4 cup pure maple syrup
- 1 T. harissa paste
- 2 t. cumin seeds
- Kosher salt and freshly ground black pepper
- 2 1/2 pounds small rainbow carrots, scrubbed, tops trimmed to about 1/2”, halved
- 1 lemon, thinly sliced, seeds removed
Make Ahead Chicken Gyros

Chop the cucumber and wrap in a towel a squeeze to remove as much water as possible
- For the chicken:
- 1 cup plain Greek yogurt
- 1 regular cucumber, peeled and seeded
- 1 teaspoon minced garlic
- 1 1/2 teaspoon white wine vinegar
- Salt and pepper
- 1 Tbsp fresh lemon juice
- 2 teaspoons minced garlic
- Juice of 1 lemon (2-3 Tablespoons)
- 2 teaspoons red wine vinegar
- 2 Tablespoons extra virgin olive oil
- 2 heaping Tablespoons plain Greek yogurt
- 1 Tablespoon dried oregano
- Salt and pepper
- 1 1/4 lbs. boneless, skinless chicken breasts
- To assemble: Pita bread
- Fresh tomatoes, seeded and diced
- Red onion, sliced thin
Crockpot Creamy Chicken and Rice Soup

Love being able to have this cook all day and have a warm, delicious soup ready when I get home!
- 1 C carrots, chopped
- 1 C celery, chopped
- 1 medium-sized onion, chopped
- 10 C water
- 8 chicken bullion cubes (or 8 t bullion granules)
- salt and pepper
- 1 t parsley
- 1 bay leaf
- 1 t thyme
- 2 chicken breasts
- 2 chicken thighs
- 1 C rice (I use short grain)
- 1 (10 ounce) can cream of chicken soup
Freezer Chicken and Dumplings

1. In large soup pot, sauté chicken and onion over medium heat until chicken is browned, about 6-8 minutes
- For dumplings:
- 2 lbs boneless, skinless chicken breasts, cut in 1" cubes
- 1 cup yellow onion, chopped
- 1 cup celery, thinly sliced
- 1/4 cup all purpose flour
- 10 cups chicken broth (seems like a lot, but trust me….its ok)
- 2 cups carrots, sliced
- 1/2 tsp ground thyme
- 2 cups all purpose flour
- 1 tbsp baking powder
- 3/4 cup buttermilk (if you don’t have buttermilk, put 1 tsp vinegar in measuring cup and fill with milk to make 3/4 cup. Let it set to get thick)
Crockpot Hot Chocolate

Combine all ingredients in a crockpot
- 2 cups water
- 8 T. of unsweetened cocoa
- 8 T. sugar
- 6 cups milk
- 1 T. vanilla
- Whip topping and/or mini marshmellows
Roasted Garlic Chicken & White Herb Pizza

Instructions Preheat oven to 450 degrees
- 1 pound pizza dough
- 1 Tbls butter
- 8 cloves roasted garlic, minced
- 2 Tbls all-purpose flour
- 1/2 tsp black pepper
- 1/2 cup skim milk
- 1/4 cup half and half
- 1/4 cup Parmesan cheese
- 1 1/2 cup boneless skinless chicken breast, cooked and shredded
- 1/4 cup red onion, diced
- 3/4 cup Mozzarella cheese
- 1 tsp fresh thyme, chopped
- 1/2 tsp dried oregano
- 1 Tbls fresh parsley, chopped
Baked Honey Mustard Chicken

Preheat oven to 400 degrees F
- 3 tablespoons Dijon mustard
- 3 tablespoon whole grain mustard
- 3 tablespoons honey, or more, to taste
- 2 tablespoons chicken stock, or more, to taste
- 1 tablespoon olive oil
- 3 sprigs rosemary
- 1 tablespoon olive
- 1 tablespoon whole grain mustard
- Kosher salt and freshly ground black pepper, to taste
- 8 bone-in, skin-on chicken thighs
Baked Brie with Raspberry Preserves

- 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
- 1/2 cup raspberry or strawberry preserves
- 1/3 cup sliced almonds, toasted
- 1 round (12 to 13 oz) Brie cheese
- Assorted crackers, baguette slices, or apple slices, as desired
Mashed Cauliflower and Cheese

Directions Add the cauliflower to a medium-sized saucepan along with the chicken stock
- 1 large head cauliflower, finely chopped (about 2 pounds)
