In a small bowl, mash the softened butter with the olive oil, garlic, oregano and paprika
- 2 tablespoons unsalted butter, softened
- 2 tablespoons olive oil
- 2 garlic cloves, pressed
- 1 tablespoon roughly chopped fresh oregano
- 1 teaspoon sweet paprika (pimento de la vera dulce)
- Kosher salt
- Black pepper
- 4 boneless, skinless chicken breasts
- 2 cups mixed cherry tomatoes
- 2 tablespoons chopped fresh flat-leaf parsley

Spicy Honey-Brushed Chicken Thighs

1. Preheat broiler. Combine first 6 spice ingredients in a large bowl
- 2 * 2 teaspoons garlic powder
- 2 * 2 teaspoons chili powder
- 1 * 1 teaspoon salt
- 1 * 1 teaspoon ground cumin
- 1 * 1 teaspoon paprika
- 1/2 * 1/2 teaspoon ground red pepper
- 8 * 8 skinless, boneless chicken thighs

- 6 * 6 tablespoons honey
- 2 * 2 teaspoons cider vinegar
Earl Grey Chocolate Cake

Heat oven to 350° F. Coat an 8-cup fluted tube pan (that's a bundt, right?) with cooking spray
- 6 Earl Grey tea bags or 2 tablespoons loose Earl Grey
- 1 cup water
- 1/2 cup (1 stick) butter
- 3 eggs
- 2 cups granulated sugar
- 4 ounce unsweetened chocolate, melted & cooled
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon kosher salt

Deanna's Shower Baked French Toast

- 1 10 oz loaf challah
- 8 large eggs
- 3 cups whole milk
- 4 tsp sugar
- 3/4 tsp salt
- 1 tsp vanilla
- Praline Topping
- 2 sticks softened butter
- 1 c packed lt brown sugar
- 1 c chopped pecans
- 2 T light corn syrup
- 1 tsp cinnamon
Coconut Barley Pilaf With Corn, Chicken and Cashews

1. Cut chicken into 1-inch chunks; season with salt and pepper
- 1 large boneless, skinless chicken breast (about 10 ounces), rinsed and patted dry
- 1/2 teaspoon salt, plus more to taste
- Freshly ground black pepper
- 2 tablespoons extra virgin olive oil
- 1/2 cup salted roasted cashews, roughly chopped
- 1/2 medium onion, diced small (about 1 cup)
- 1 jalapeño pepper, diced
- 2 cups pearled barley
- 1 can (15-ounce) coconut milk
- 2 ears corn, kernels sliced off the cob (about 1 1/2 cups)

- 8 lg eggs
- 3 c whole milk

- 3/4 tsp salt

Chicken & Lemon Potstickers (light)

To prepare pot stickers, bring sherry and 1/2 cup water to a boil in a small saucepan
- Pot stickers:
- 1/2 cup dry sherry
- 1/2 cup water
- 1/2 ounce dried shiitake mushrooms
- 3/4 cup finely chopped bok choy (about 1/2 pound)
- 1/3 cup chopped green onions
- 1/4 cup finely chopped water chestnuts
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon salt
- 2 teaspoons minced peeled fresh ginger
- 2 teaspoons grated lemon rind
- 1 teaspoon dark sesame oil
- Dash of hot sauce
- 1/2 pound ground chicken or turkey
- 24 wonton wrappers
- 2 tablespoons cornstarch
- 1/4 cup vegetable oil, divided
- 1 cup water, divided
- Sauce:
- 5 tablespoons mirin (sweet rice wine)
- 1/4 cup low-sodium soy sauce
- 1/4 cup seasoned rice vinegar
- 3 tablespoons chopped green onions
- 1 teaspoon chile paste with garlic
Oven-Barbecued Pimentón Brisket

1. Heat oven to 210 degrees
- 1 tablespoon kosher salt
- 1/4 cup sugar
- 2 tablespoons cumin
- 1 tablespoon pepper
- 1/4 cup pimentón de la Vera, preferably agridulce
- 1 whole, untrimmed beef brisket (about 10 pounds)
- Barbecue sauce (see recipe).
Chicken Salad with Peas, Feta and Mint

For Salad: 1. Prepare a large bowl of ice water
- 3 tablespoons coarse sea salt
- 1 cup shelled fresh or frozen peas (no need to thaw)
- 3 small spring onions or scallions, white part only, trimmed, peeled and cut into thin rounds
- 4 ounces Greek feta cheese, crumbled (1 cup)
- 1/4 cup fresh mint leaves, cut into a chiffonade
- 3 cups shredded cooked chicken or turkey
- 8 ounces cherry tomatoes, halved
- 1 large ripe avocado, halved, pitted, peeled, and thinly sliced
- 2 heads baby romaine (sucrine or Little Gem), coarsely shredded
- 4 radishes, rinsed, trimmed, halved, and thinly sliced
- 1/4 cup minced fresh chives
- Fine sea salt
- Creamy Lemon-Chive Dressing
- 2 tablespoons freshly squeezed lemon juice
