1. Preheat oven to 400 degrees
- Martha Stewart serves 4
- 1 small spaghetti squash (about 4 lbs) halved lengthwise
- I lb veal scaloppini, pounded thin.
- FOR THE CRUMBS
- 1/2 cup plain breadcrumbs
- 1/2 cup finely shredded parmesan cheese
- 1/4 tspn freshly ground pepper
- FOR THE GARNISH
- 1 1/2 tspns plus 1 TBSPN extra virgin olive oil.
- FOR THE SPROUTS
- 1 garlic clove, peeled and halved
- 1 TBSPN freshly squeezed lemon juice
- 1/4 tspn coarse salt
- 1 cup grape or cherry tomatoes, halved
- 3 ounces sunflower sprouts (2 cups packed)
- 2 ounces pea shoots (3 cups packed)

- 1 cup dry Marsala
- 6 medium Golden Delicious apples
- 8 Tbsp (packed) golden brown sugar
- 6 Tbsp golden raisins
- 1/4 tsp ground nutmeg
- 3 Tbsp unsalted butter
- Vanilla ice cream
- 6 almond biscotti

Marinate for 6-8 hours. Turn meat occasionally during the process
- Marinate
- 4 Tbsp balsamic vinegar
- 4 Tbsp fresh lemon juice (2 large lemons)
- 3 Tbsp Dijon mustard
- 1 Tbsp Worcestershire sauce
- 2 Tbsp soy sauce
- 2/3 cup olive oil
- 1 tsp pepper
- 1/2 tsp dried hot red pepper flakes
- 1 bay leaf, if available, crumbled
- 1 medium sweet yellow onion, finely chopped
- 4 large garlic cloves, minced
- 2 – 2 1/2 lb steak

In a Dutch oven or large skillet, sauté onion and garlic in 2 Tbsp oil until golden brown
- 6-8 pounds pork shoulder or pork tenderloin
- 4 Tbsp olive oil divided
- 1 large sweet yellow onion, diced and sautéed
- 1-2 large cloves garlic, chopped fine
- 1/2 cup vinegar (red wine, cider or specialty vinegar)
- 1 tsp dry mustard
- 1/2 cup Worcestershire sauce
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey or 1 tsp sugar
- 1-2 Tbsp tobacco sauce or 1 Tbsp Sriracha chili
- 2 cups water
- 2 cups ketchup
- 1/8 cup mesquite or hickory liquid smoke
- 1/4 cup butter
- Salt and pepper to taste when done

Dredge veal shanks in flour, patting down to coat
- 4 large veal shanks (10 -12 oz each)
- 1 cup flour
- 1/4 cup olive oil
- 2 cups red wine
- 2 medium carrots, diced
- 1 large sweet yellow onion, diced
- 1 large stalk celery, diced
- 4 cloves garlic, minced
- 4 Roma tomatoes, seeded and diced
- 2 Tbsp fresh basil, chopped
- 2 tsp fresh chopped parsley, plus some more for garnish
- 1 small prig of rosemary plus 1 sprig for garnish
- 2 cups beef consume or broth
- 1/2 tsp kosher salt
- 1/2 tsp fresh ground pepper

- 2 tsp curry paste (such as Thai Red Curry Base)
- 1/3 cup canned low-salt chicken broth
- 1/2 cup canned unsweetened coconut milk
- 1 Tbsp fresh lime juice

- 8 skinless, boneless chicken thighs
- Spices (see below)
- 4 tbsp olive oil, divided
- 1 pound baby potatoes, halved
- 2 cups cherry tomatoes
- 8 cloves garlic
- 10 dried apricots
- 2 tbsp fresh parsley
- For the spices
- 1 (3/5-ounce) packet of Kitchens of India brand paste for tikka masala (found at Sprout’s) mixed with 1 cup warm water
- 1 tsp black pepper
- 1/2 tsp cayenne pepper
- 1 tsp cinnamon, ground
- 1 tsp smoked paprika
- 1 tsp salt
