Perfect Pumpkin Pie

- 1 ( 15 oz.) can pumpkin (about 2 cups)
- 1 ( 14 oz.) can EAGLE BRAND Sweetened Condensed Milk
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 (9-inch) unbaked pie crust
Fruitcake Squares

Cream margarine and brown sugar
- 1-1 1/2 cups light brown sugar, not packed
- 1 stick margarine
- 2 eggs
- 1 cup all-purpose flour, unsifted
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1 pound candied red cherries, cut*
- 1/2 pound candied pineapple, cut*
- 2 cups pecans, chopped
- I use a candied cherry/pineapple mix
APPLE DUMPLING BAKE

Unroll crescent rolls and separate dough into 16 triangles
- 2 tubes 8 oz refrigerated crescent rolls
- 2 medium Granny Smith apples peeled and cored
- 1 cup sugar
- 1/3 cup butter melted
- 3/4 cup Mountain Dew soda
- Ground cinnamon
GERMAN SWEET CHOCOLATE CAKE

HEAT oven to 35()•F. line bottoms of 3 (~h)_ round cak;-pans with wax paper
- 1 package (4 ounces) BAKER'S GERMAN'S Sweet Chocolate
- 1/2 cup water
- 2 cups flour
- 1 cup (2 sticks) margarine or butter, softened
- 2 cups sugar
- 4 egg yolks
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 cup butter milk
- 1/4 teaspoon salt
- 4 egg whites
- COCONUT-PECAN FILLING AND FROSTING
- 1 can (12 ounces) evaporated milk
- 1 1/2 cups sugar
- 3/4 cup (1 1/2 sticks) margarine or butter
- 4 egg yo1ks, slightly beaten
- 1 1/2 teaspoons vanilla
- 1 package (7 ounces) BAKER'S ANGEL FLAKE coconut(about 2 2/3 cups}
- 1 1/2 cups chopped pecans
SWEET POTATO POUND CAKE

Preheat oven to 350. Beat cream cheese and butter at medium speed until creamy
- 1 8oz package cream cheese, softened
- 1/2 cup butter softened
- 2 cups sugar
- 4 large eggs
- 2 1/2 cups cooked, mashed sweet potatoes
- 3 cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon or nutmeg
- 1 tsp vanilla extract
FRUIT CAKE COOKIES

Cream sugar and butter. Add eggs
- 1 cup butter
- 1 cup light brown sugar
- 2 cups flour (cake flour)
- 3 eggs
- 1 tsp soda
- 1 tsp cinnamon
- 1 pound raisins
- 1 pound chopped dates
- 1 pound candied cherries chopped
- 1 pound candied pineapple
- 7 cups nuts chopped
OLD FASHION POUND CAKE

Cream butter and sugar until light and fluffy
- 3 cups sugar
- 1 lb butter softened
- 10 eggs
- 4 cups plain flour
- 2 tsp baking powder
- 2 tsp vanilla
HUMMINGBIRD CAKE

Combine first 5 ingredients in a large bowl; add eggs and oil stirring until dry ingredients are moistened
- 3 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups sugar
- 1 tsp ground cinnamon
- 3 large eggs, beaten
- 1 cup vegetable oil
- 1 1/2 tsp vanilla extract
- 1 (8 ounce) can crushed pineapple, undrained
- 1 cup chopped pecans
- 2 cups chopped bananas
- Cream Cheese Frosting
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter or margerine, softened
- 1 (16 ounce) package powdered sugar, sifted
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
CHRISTMAS MUFFINS

Mix and bake in miniature muffin pans that have been sprayed with Pam
- 1/2 pound candied cherries
- 1/2 pound candied pineapple
- 7 cups chopped nuts
- 1 1/2 cups self rising flour
- 2 cans eagle brand condensed milk
SWEET POTATO CASSEROLE

Mix all together. Bake at 400 for 20 min
- 2 cups mashed sweet potatoes
- 1 1/4 cups sugar
- 2 eggs
- 3/4 stick of butter
- 1 cup milk
- 1/2 teaspoon nut meg
- 1/2 cinnamon
