Ooey-Gooey Rocky Road Cookies

1. Cream avocado and both kinds of sugar with mixer
- 1/2 cup avocado (about 1/2 of medium-sized avocado)
- 1/2 cup sugar or honey
- 1/2 cup plus 2 Tbsp brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 &1/4 cup white wheat flour
- 1/4 cup unsweetened baking cocoa powder
- 1/2 tsp baking soda
- 1 tsp hot water
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup mini marshmallows
- 1/2 cup sliced almonds
Parmesan-crusted chicken

Preheat oven to 425 degrees
- 1/2 cup Greek yogurt
- 1/4 cup Parmesan cheese, grated
- 4 boneless, skinless chicken breast halves (about 1 1/4 pounds)
- 4 tsp. Italian seasoning

1. Mix herbs, garlic, oil, lemon juice & lemon halves; season with salt
- 1/2 cup finely chopped mixed fresh leafy herbs, such as thyme, tarragon, parsley & basil
- 3 cloves garlic, sliced
- 3 Tbsp EVOO
- 2 lemons, halved and juiced

- 2 lb. 99% lean ground turkey breast
- 3 15 oz. cans of great northern beans, or kidney beans (mixed is great)
- 1 15 oz. can of pumpkin puree
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1/2 Tbsp Chili powder (or more to taste)
- 1 Tbsp Cumin
- 1 tsp Oregano
- 2 tsp black pepper
- 2-3 cups of low sodium chicken broth
- 1 tsp. olive oil
- Salt to taste
Mediterranean Farro Salad

FIRST In a medium sauce pan combine farro, water, stock, and salt
- Salad:
- 2 cups farro, rinsed
- 2 cups water
- 4 cups organic chicken stock
- 1 teaspoon salt
- 2 chicken breasts, roasted and torn into bite-size pieces (or 3 cups shredded rotisserie chicken)
- 2 cups cherry or pear tomatoes, halved
- 2 cups English cucumber, chopped
- 2 ounces crumbled feta
- 1/4 cup Kalamata olives, chopped
- 1/4 cup fresh mint leaves, torn
- Vinaigrette:
- 3 tablespoons red wine vinegar
- 2 tablespoon olive oil
- 2 teaspoons Dijon mustard
- 2 teaspoons fresh oregano, chopped
- 1/2 teaspoon sugar
French Dip Sandwiches

1. In a medium saucepan, melt 2 tablspoons butter over medium heat
- 4 tablespoons butter, softened
- 1 shallot, finely chopped
- 1 tablespoon cornstarch
- 2 cups beef broth
- 1 pound sliced roast beef
- 1 baguette, split lengthwise and sliced crosswise into 4 sections
- 4 ounces slice pepper Jack cheese
