Summer Vegetable Tian

Sliced summer veggies baked with cheese! YUM!
- 1 TB Olive Oil
- 1 Medium Onion
- 1 TSP Minced Garlic
- 1 Medium Zucchini
- 1 Medium Yellow Squash
- 2 Medium Potatoes
- 2 Medium tomatoes
- 1 TSP Thyme
- Salt & Pepper to taste
- 1 Cup Shredded cheese
Vanilla Bean Wafers

This recipe has been in my family for over 100 years
- 1 lb Unsalted Butter (softened)
- 1 cup Pecans or Almonds (very finely chopped)
- 1 cup Sugar
- 4 cups Flour
- Powdered Sugar**
- Vanilla Bean**
Texas Caviar

Great healthy and colorful party dish! Very easy to make this your own by changing up the ingredients
- Marinade:
- 1 can Black Eyed Peas (drained & rinsed)
- 1 can Black Beans (drained & rinsed)
- 1 cup frozen Kernel Corn (thawed)
- 1 cup diced Green Peppers
- 1 cup diced Red Peppers
- 1 cup diced Celery
- 1 diced White or Red Onion
- minced Jalapenos (to taste)
- 3/4 cup Olive or Canola Oil
- 3/4 cup Sugar (can substitute Splenda)
- 3/4 cup Apple Cider Vinegar
Winter Chicken and Dumplings

A nice comforting dish to take the chill out of the cold winter! Has a bit of spice for added warmth
- DUMPLINGS:
- 6 Boneless Skinless Chicken Thighs
- 3-4 tbsp Olive Oil
- 1-1/2 cups flour
- 1 tsp salt
- 1/2 - 3/4 tsp Cayenne Pepper
- 1/2 tsp black pepper
- 2 leeks
- 3 Celery Ribs
- 3 Carrots
- 2 Parsnips
- 2 Sweet Potatoes
- 1/4 cup Dry White Wine
- 48 oz Chicken Broth
- 1 tbsp Lemon Juice
- 1-1/2 tsp Rosemary
- 1-1/2 tsp Sage
- 1-1/2 cups flour
- 1/4 cup Asiago or Parmesan Cheese
- 2-1/2 tsp Baking Powder
- 2 tsp Sugar
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 2/3 cup Milk
- 3 tbsp Butter
Authentic German Potato Salad

Place the potatoes into a pot, and fill with enough water to cover
- 3 cups diced peeled potatoes
- 4 slices bacon
- 1 small onion, diced
- 1/4 cup white vinegar
- 2 tablespoons water
- 3 tablespoons white sugar
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley
Chicken & Rice Soup

This recipe makes its own stock, requires no straining and has very little fat
- 2 Chicken Breasts (skinless)
- 2 Chicken leg quarters (with skin)
- 1 1/2 tbsp Black Pepper
- 1/2 tsp Red Pepper Flakes
- 2 –3 Bay Leaves
- 5 cups Celery (diced)
- 3 cups Onion (diced)
- 2 cups Carrots (sliced)
- 1 cup Wild Rice, Brown Rice or Pearl Barley
Onion Corn Bread Shortcake

A wonderfully delicious side dish
- 2 large Sweet Onions (thinly sliced)
- 1/2 cup Butter or Margarine
- 8 oz. Sour Cream
- 1/2 tsp Dill Weed
- 1/4 tsp Salt
- 8 oz. shredded Cheddar Cheese (divided)
- 1 can Creamed Corn (undrained)
- 1/2 cup Milk
- 1 box Jiffy Brand Corn Muffin Mix
- 1 Egg beaten
- 4 drops Tabasco Sauce
Almond Citrus Pound Cake

- Citrus Glaze:
- 3/4 cup Flour
- 1 tsp Baking Powder
- 3/4 tsp Salt
- 2 7oz.tubes Almond Paste like Odense (not marzipan)
- 1 cup + 1 tbsp Sugar
- 2 Lemons
- 2 Tangerines or Oranges
- 1 1/2 cups Unsalted Butter (softened)
- 7 Eggs (room temp)
- 1/2 tsp Vanilla Extract
- Juice of 2 Tangerines
- Juice of 1 Lemon
- 1/4 cup Sugar
- 1 tbsp Water
- 1/4 tsp Vanilla Extract
- Powdered Sugar for dusting
Shrimp Peperonata

- 1 1/2 lbs Shrimp
- 2 tbsp Olive Oil
- 1/2 cup Flour (for dusting shrimp)
- 1 Large Red Onion (thinly sliced)
- 2 cups Roasted Red Peppers (thinly sliced)
- 2 Cloves Garlic (minced)
- 1/2 cup Chicken Broth
- 1/3 cup White Wine Vinegar
- 2 tbsp Sugar
- 2 tbsp lemon juice
