Coconut Lime Rice

1Rinse rice until the water runs clear; drain
- 1 cup basmati rice
- 1 tablespoon coconut oil
- 1 teaspoon butter
- 1/4 cup flaked coconut
- 1 cup coconut milk
- 1 cup chicken broth
- salt, to taste
- 1 lime, zested and juiced
- ground black pepper, to taste
Lemony Basil Mushroom Soup

Bring to boil. Simmer all ingredients for 35 to 40 minutes
- SAUTE:
- 1 1/4 cups chopped onions
- 1 lb sliced mushrooms
- 1 cup sliced celery
- 1 cup sliced carrots
- 4 cloves garlic, minced
- 1/4 cup margarine or butter ( or a small amount of olive oil)
- Add:
- 1 box/can 32 oz chicken broth
- 1 box/can 32 oz beef broth
- 1 can condensed cream of chicken soup
- or cream of mushroom or cream of mushroom w/roasted garlic
- 1/2 cup fresh basil leaves, chopped
- 1/2 tsp pepper
- 1 tsp lemon juice
- 1/2 cup uncooked wild rice
- 1/2 cup uncooked white rice
- low fat cream of mushroom soup works great
Easy Swiss Steak

- 4 cube steaks
- 1 Tbsp canola oil
- 2 cups sliced mushrooms
- 1 cup chopped onion
- 1 can campbell's golden mushroom soup
- 1 15 oz can diced tomatoes
- salt, pepper and garlic salt to taste

- 1/3 C blueberries
- 1/3 C raspberries
- 1/3 C chopped strawberries
- 2 tbs orange juice

- 1 1/4 C graham cracker crumbs
- 1/4 C sugar
- 1/4 C melted butter
- CHEESECAKE FILLING
- 2 8 oz packages softened cream cheese
- 2 eggs
- 1/2 C sugar
- 1 tsp vanilla
- SOUR CREAM TOPPING
- 1 pint sour cream
- 1/4 C sugar
- 1 tsp vanilla

- 1/2-1 jalapeno pepper, stemmed seeded and minced
- 1/2 teaspoon dry mustard
- 1 1/2 large mangoes , peeled pitted and diced
- 1/4 cup orange juice concentrate, frozen
- 1 teaspoon fresh ginger , finely minced
- 1/2 medium red bell pepper , thinly sliced
- 1/2 mango , peeled pitted and cubed
- 1/2 teaspoon salt
- 8 cups green cabbage , shredded
- 6 green onions , thinly sliced
