Devilish Carrots

A little spunk to a simple carrot side dish
- Topping:
- 4 c. carrots (shredded)
- 3/4 c. mayonnaise
- 1 small onion, choppd (sweet or red )
- 1/2 c shredded cheddar cheese
- 3 tbsp prepared horseradish
- 1/4 tsp sugar
- Season with salt and pepper
- 12 saltine crackers, crushed
- 3 tbsp butter
- 2 tbsp chopped parsley
New England Clam Chowder

Easy and simply delicious
- 1 large sweet white onion, diced
- 3 lbs diced potatoes (I use frozen pkg of potatoes most times)
- 1 can (51 oz) of diced clams
- 3 cups vegetable stock
- 2 cups heavy cream
- 2 tbs. parsley, minced
- 2 tbs. garlic power, or fresh pureed garlic
- 4 tbs butter
- 2 bay leaves
- 3 tsp. thyme
- 2 tbs. fresh ground pepper
Walnut Raisin Shortbread Bars

Cookie meets walnut pie. This is an ooey, gooey and definitely rich and yummy shortbread bar
- CRUST
- 1 cup butter
- 2 cup flour
- 4 Tbsp brown sugar
- FILLING
- 6 eggs, beaten
- 3 cup brown sugar
- 2 tsp vanilla
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup oatmeal
- 1 cup raisins
- 1 walnuts
Sweet and Spicy Walnut Crescent Rolls

A different twist on spicy
- 1 can refrigerated crescent roll dough
- 1/4 c liht brown sugar
- 1/4 c finely chopped walnuts
- 1 Tbsp creamy horseradish
- you can adjust sugar or horseradish to your prefered sweetness or zing.
Pecan Apple Crisp

Not sure what to do with lots of apples? This crisp is easy and flavorful
- Topping:
- 10 cups sliced, peeled apples**
- 1/3 cup packed brown sugar
- 1/4 c butter diced
- coat apples with lemon or lime juice as you slice them. Keeps them from going brown, and adds a hint of citrus in the recipe.
- 3/4 cup rolled oats
- 1/2 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/3 cupbutter, melted
- 1/2 cupchopped pecans

Corn Salsa

So delicious and hard to put in just one category
- Dressing:
- 1/3 c water
- 1/3 c sugar
- 1/4 c white balsamic vinegar
- 2 tblsp olive oil
- Main ingredients:
- 4 c frozen yellow corn, defrost & rinse
- 1 small purple onion
- 1 red bell pepper
- 1 medium skinny zucchini
- 1/2 c chopped cilantro
- 1/2 tsp fresh ground pepper
- salt to taste
Russian Tea Cakes

Buttery, nutty, and bite sized delights
- 1 cup butter
- 1/2 confectioners sugar
- 1 1/2 tsp vanilla
- 2 1/2 cup flour
- 1/4 tsp salt
- 3/4 cup FINELY chopped nuts (I use walnuts most)
- will need another cup of confectioners sugar to roll.
Toffee Cracker Candy

- 1 cup brown sugar (tightly packed)
- 2 cups chocolate chips
- 40 club crackers (almost 2 sleeves)
- 1/2 cup nuts (optional- prefer walnuts or pecans
Zucchini Quiche

This recipe is simple and delicious, and makes a really great breakfast or brunch
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 4 ounces butter
- 3 zucchini, about 21 to 22 ounces
- 2 red onions
- Olive oil
- A handful fresh dill, chopped
- 1 1/4 cup milk
- 3 eggs
- 2 to 3 ounces shredded Parmesan
- Salt and pepper, to taste
Chocolate-Cranberry-Coconut Bars

I have made these since I was college, and I rarely make them EXACTLY the same way
- 2 cups graham cracker crumbs
- 3/4 cup butter
- 2 cans sweetened condensed milk
- 1 cup milk chocolate chips
- 1 cup dark chocolate chips
- 1 cup white chocolate chips
- 2 cups flaed coconut
- 1 1/2 cup chopped nuts (walnuts, pecans, almonds)...sometimes I mix them.
- 1 1/2 cups dried cranberries (I have subbed raisons or dried cherries)
