I was planning to make steak and kidney pie but had no kidneys! The result is this delicious steak and ale pie

  • 2 pounds of braising/stewing steak diced
  • 2 tbsp of plain flour
  • 2 large onions roughly chopped
  • 2 large carrots roughly chopped
  • 1 stick of celery roughly chopped
  • 3/4-1 pint of dark beer or ale
  • 2 bay leaves
  • 3 tsp mixed herbs e.g. rosemary and thyme
  • 3-4 tablespoons tomato ketchup
  • 2 tsp balsamic vinegar
  • splash of Worcestershire sauce
  • Salt and pepper
  • 1 pack of puff pastry

  • 2 courgettes chopped
  • 4 eggs lightly beaten
  • Large handful of parmesan grated

  • 1 400g tin of chopped tomatoes
  • 2 Medium onions, chopped
  • Vegetable oil
  • A thumb sized piece of fresh ginger, grated
  • 2 Cloves of garlic, crushed and chopped
  • 1-2 Green chillies chopped
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 1/2 tsp Turmeric
  • A splash of water
  • 8 Skinless chicken pieces
  • Half a cup of plain yoghurt
  • Salt and pepper
  • Fresh lime and coriander leaves to finish.

  • For the sauce:
  • Olive oil
  • 2 Onions finely chopped

  • 350 g Strong white bread flour.
  • 1 7g Sachet of instant yeast.
