Avocado, Cucumber, and Cherry Tomato Salad

Recipe from Cooking Light Magazine (July Issue)
- 1 cup farro or spelt (I didn't want to go to the store so I just used basmati)
- 4 tsp evoo
- 1/4 tsp fresh grated lime rind
- 1 tb fresh lime juice
- 1 tb white wine vinegar
- 3/4 tsp salt
- 1/2 tsp black pepper
- 2 cups cherry tomatoes, halved
- 1 3/4 cups chopped seeded cucumber (about 1 small)
- 1/4 cup cilantro
- 3/4 cup sliced peeled avocado (about 1 small)
Mediterranean Hummus Sandwich

Roasted Vegetables: Thinly slice all veggies
- Cilantro Hummus:
- 1 medium cucumber
- 2 vine ripened tomatoes
- 1 small sweet onion
- 1 medium red pepper
- 1 medium yellow pepper
- 2 tb greek dressing
- feta cheese to taste
- 1 bag multi grain mini bagels
- 14 oz can garbanzo beans (drained, but reserve juices)
- 3 tb tahina
- 1 sm bunch cilantro (chopped)
- 2 tsp minced garlic
- juice of 1 lime
- 1 tb olive oil
- pinch of sea salt

- 2 tbsp ground ginger
- 2 tbsp ground cinnamon
- 2 tbs ground cloves

- 2 egg yolks beaten
- 1/2 cup butter
- 1 1/3 cups honey

Turkey Parmesan

Heat oven to broil. Bring sauce to low simmer in a small saucepan over medium-low heat
- 2 cups low-sugar pasta sauce
- 1/2 cup pine nuts, coarsely chopped
- 1 oz freshly grated parmesan cheese (1/4 cup)
- 1/2 tsp dried Italian seasoning
- 1 pound turkey cutlets, about 1/3 inch thick
- 2 tsp extra virgin-olive oil
- 2 oz shredded part-skim mozzarella cheese (1/2 cup)

- 2 * 2 cups lowfat cottage cheese
- 2 * 2 egg whites or the equivalent of 1 egg substitute
- 2 * 2 cups shredded lowfat mozzarella cheese (freshly graded tastes best)
- 1 * 1 jar spaghetti sauce (32 ounces- I go for low fat and garlic/ mushrooms)
- 1 * 1 pkg frozen chopped spinach (if you love spinach you can do 2
- 9 * 9 or 10 uncooked lasagna noodles
- 3 * 3 cloves garlic chopped finely
- 3/4 * 3/4 teaspoon oregano

- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon

- Frosting:
- 8 tablespoons (1 stick/4 oz./113g) butter, at room temperature
- 3 cups confectioners' (icing) sugar, sifted
