Tomato Sauce

1. Heat olive oil and butter over medium-low heat, in a large saucepan
- 1 tbsp extra virgin olive oil
- 1 tbsp butter
- 2 small red onions, finely chopped (about 1 cup)
- 1 garlic clove, minced
- 1 carrot, finely grated
- 1 lb ground meat (1/2 beef, 1/2 pork)
- 2 (28 oz) cans pureed tomato sauce (pomodoro passato)
- 4 basil leaves
- 3 sage leaves (optional)
- 1 bay leaf (optional)
- 1 tbsp tomato paste
- salt to taste (each layer is seasoned with salt)
- freshly ground black pepper
- 1-2 garlic cloves, minced (optional)
- 1/4 - 1/2 cup of milk (this helps to neutralize the acidity level from the tomatoes)
NO BAKE CHEESECAKE WITH HOMEMADE STRAWBERRY TOPPING

Light and creamy no-bake cheesecake topped with a luscious strawberry sauce
- Crust:
- 8 oz (250 g) graham crackers (about 15)
- 1 tbsp granulated sugar
- 1 stick (4 oz or 110 g) unsalted butter, melted
- Filling:
- 2 (8 oz each or 500 g) bars cream cheese, room temperature
- 1/2 cup (65 g) sifted confectioners' sugar (first sifted and then measured)
- 1 cup (250 g) Greek yogurt (full-fat)
- 2 Sachets vanilla sugar, or 2 tsp vanilla extract
- 1 tbsp cornstarch (optional)
- 3/4 cup (200 ml or 200 g) cold heavy cream, whipped
- Topping:
- 13-14 oz (375 g) fresh or frozen strawberries (if using frozen, don't unthaw)
- 1/2 cup (110 g) granulated sugar
- 1-2 tbsp cornstarch
- 1/2 cup (125 ml) water
Spaghetti and Meatballs

Calabrian-style meatball is simmered in a butter-onion tomato sauce
- Sauce:
- 2 x 28 oz (800 g) pureed tomato sauce (or pomodoro passato)
- 1/2 cup (112 g) unsalted butter
- 2 medium onions (or 1 large), peeled and halved through the root
- 1/2 tsp salt, or to taste
- 1/2 tsp sugar for acidity (if necessary)
- Meatballs:
- 1 cup (100 g) fresh white bread crumbs
- 8 tbsp milk
- 8 oz. (250 g) ground beef
- 8 oz. (250 g) ground pork
- 1 cup (100 g) grated parmesan (Grana Padano or Romano Pecorino also work well)
- 1/3 cup (15 g) finely chopped Italian parsley
- 1 tsp salt, or to taste
- 1/4 tsp freshly ground black pepper, or to taste
- 1 large egg
- 2 large garlic cloves, pressed or very finely minced
- Pasta and Cheese:
- 1 lb (500 g) spaghetti
- Freshly grated Parmesan cheese for serving (Grana Padano or Romano Pecorino can also be used)
Pesto Rosso

Homemade pesto rosso with sundried tomatoes, walnuts and garlic
- 1 1/2 cups (7 oz or 200 g) sun-dried tomatoes (not in oil and packed in the cup)
- 1 1/4 cups (4 oz or 125 g) grated Grana Padano
- 1 cup walnut halves (3.5 oz or 100 g) walnuts, finely chopped (about 3/4 cup finely chopped)
- 2-4 large garlic cloves, finely chopped or minced
- 1 1/2 cups (375 ml or 300 g) extra virgin olive oil
- salt and pepper, to taste

- 4 apples - peeled, cored and chopped
- 3/4 cup water
- 1/4 cup white sugar
- 1/2 teaspoon ground cinnamon
