Lasagna "Cupcakes"

These are weight watcher friendly and super Delicious
- 1/2 lb 95% lean ground beef
- 1 1/2 t Italian seasoning
- 5 oz mushrooms, chopped
- 16 wonton wrappers (check the produce department!)
- 4 oz fat free Ricotta cheese
- 1 1/2 oz Parmesan cheese, freshly grated
- 1 c pasta sauce (I used Wegmans brand Tomato & Basil)
- 4 oz reduced fat 2% shredded Mozzarella cheese
Chicken and Rice Casserole

Add to Recipe Box , but with mushrooms and without tomatoes
- 2 1/2 lbs boneless, skinless chicken thighs, cut into 1 to 1 1/2 inch pieces, patted dry
- Salt and pepper
- Olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 lb cremini or button mushrooms, sliced
- 1/4 cup dry sherry or white wine
- 1 1/3 cups* chicken stock**
- 1/2 cup sour cream
- 1/4 cup cream
- 1 cup raw, medium or long grain, white rice
- 1 1/2 teaspoon salt
- 1 teaspoon each of Italian seasoning and poultry seasoning (or 2 teaspoons of one of these herb mixes, or 2 Tbsp chopped fresh herbs such as rosemary, sage, thyme, and basil)**
- 1/2 teaspoon paprika
- 2 Tbsp chopped fresh parsley

Directions Cook noodles according to package directions

- 2 cups uncooked egg noodles
- 1/2 pound lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 cup sliced pepperoni sausage
- 16 ounces pizza sauce
- 4 tablespoons milk
- 1 cup shredded mozzarella cheese
Apple Dumplings

Sauce In large pan combine 2 c
- 2 c. sugar
- 2 c. water
- 2 c. flour
- 2 tsp baking powder
- 3/4 c shortening
- 1/4 c sugar
- 3 c. shredded, peeled cooking apples 3-4 medium
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 c. butter
- 1/2 tsp salt
- 2/3 c. Milk
- 1/2 tsp cinnamon

Directions Season salmon fillets with lemon pepper, garlic powder, and salt
- 1 1/2 pounds salmon fillets
- lemon pepper to taste
- garlic powder to taste
- salt to taste
- 1/3 cup soy sauce
- 1/3 cup brown sugar
- 1/3 cup water
- 1/4 cup vegetable oil
Creamy Rice Pudding

Directions Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water
- 3/4 cup uncooked white rice
- 2 cups milk, divided
- 1/3 cup white sugar
- 1/4 teaspoon salt
- 1 egg, beaten
- 2/3 cup golden raisins
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract

- 2 envelop;es dried onion soup
- 1 16 oz can whole berry cranberry sauce
