French Onion and Apple Soup

- 3 tablespoons unsalted butter
- 15 cups sliced yellow onion (about 4 pounds)
- 3/4 teaspoon black pepper
- 1 Honeycrisp or Pink Lady apple, peeled, quartered, and cut into julienne strips
- 3 thyme sprigs
- 2 bay leaves
- 1/2 cup Madeira wine or dry sherry
- 6 cups lower-sodium beef broth
- 1/2 cup apple cider
- 1 tablespoon sherry vinegar
- 10 (1/2-ounce) slices sourdough bread, cut into 1-inch cubes
- 2 cups (8 ounces) grated Gruyère or Swiss cheese
- Thyme leaves (optional)
Parmesan Chicken and Rice

This is one of our favorites in colder months
- Diced Chix
- 1 c Uncooked Instant Rice
- 1/2 c Onion chopped
- 1 tsp minced Garlic
- 1/2 tsp Thyme
- 8 oz Sliced Mushrooms
- 1/2 c White Wine
- 1 c Chix broth
- 1/2 c Parm Cheese
- 1/4 c Parsley
Bean, Tomato and Feta Salad

Blanch Beans -drain Combine tomatoes thru S&P Top beans with tomato mix Sprinkle with basil & feta to serve
- 3/4 lb each Green & Yellow Beans
- 2 c Tomato chopped
- 1 tb Sherry Vin
- 2 tsp Olive Oil
- S&P
- 1/2 c Basil sliced
- 1/2 c Feta
Corn, Bacon & Green Onion Quiche

Really you can put just about anything you want in this, not just corn bacon & green onion
- Pie Crust
- 1 can Corn
- 4 Bacon Strips, crumbled
- 4 Green Onions
- 2 Egg White
- 1 Egg
- 1/2 c Milk
- S&P
- Parmesan Cheese
Christmas Egg Casserole

- 3 Egg Whites
- 2 Eggs
- 1/2 c Milk
- 1 tb Garlic minced
- 1/3 c Onion chopped
- 1/2 c Roasted Red Bell Peppers
- from jar chopped
- Green onion chopped or Spinach
- Breakfast Sausage (spicy)
Fiesta Soup

This makes a huge batch. I like to use pulled pork from a local bbq place for the meat
- Cooked Meat of choice
- 2 cans Ranch Style Beans
- 1 can Black Beans drained
- 1 can Kidney Beans
- 1 can Navy Beans drained
- 1 can Corn
- 1 packet Taco Seasoning
- 2 packets Ranch Dressing Seasoning
- 1 or 2 cans diced Green Chiles

- 1 6oz frozen Lemon Juice Bottle
- 2 c sugar
- 3/4 oz Almond Extract
- 6 c Water

- 1 c Nuts (optional)
- German Chocolate Cake mix (w/ pudding)
- 1 1/3 c Water
- 3/4 c softened Butter
- 3 Eggs
