Weight Watcher Mock Sour Cream

- 3/4 cup non fat cottage cheese
- 2 teaspoons lemon juice
- 1 tablespoon fat free milk

- Fresh pickling cucumbers
- 4 quarts water
- 3/4 cup pickling salt
- 1 quart white vinegar
- 1/4 teaspoon alum
- Fresh dill, 1 head per jar
- 2-5 cloves fresh garlic per jar
Graham Cracker Pie Crust

Use this crust for a variety of fillings
- -inch:
- 1 1/2 cups (about 20 squares) graham crackers
- 3 tablespoons sugar
- 1/3 cup melted butter
Frog Eye Salad

Acine de Pepe is a small, round pasta, hence the "Frog's Eye"
- Dressing:
- 1 cup sugar
- 2 tablespoons flour
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 3/4 cups pineapple juice(from drained pineapple, if
- needed, use mandarin orange juice too)
- 1 tablespoon lemon juice
- Salad:
- 1 pkg Acini de Pepe pasta. -16 oz.
- 3 quarts of water
- 2 teaspoon salt
- 1 tablespoon (optional) oil
- 3 cans crushed pineapple (20 oz)
- 3 cans mandarin oranges (11 oz)
- 1 cup coconut
- 1 cup mini marshmallows
- 1 (9 oz) frozen whipped topping, thawed
Gooey Butter Pear Cake

Found this recipe in the Minot Daily News at Hardee's while waiting for Amy's plane to come in
- For the cake:
- 2 medium fresh pears, peeled, cored and diced (or 1-1/2 cups diced canned pears, patted dry)
- 1/2 teaspoon ground cardamom
- 1/2 cup milk, room temperature
- 1-1/2 teaspoons instant yeast
- 3 tablespoons sugar
- 1 teaspoon salt
- 1 egg
- 2 cups all-purpose flour
- 6 tablespoons (3/4 stick) unsalted butter, room temperature
- For the topping:
- 1/2 cup (1 stick) unsalted butter, room temperature
- 4 ounces cream cheese, room temperature
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 eggs
- 2 teaspoons vanilla extract
- 1/4 cup corn syrup
- 3/4 cup all-purpose flour
- To finish:
- Powdered sugar
- Toasted sliced almonds

- 1 pound ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 can (29 ounces) tomato sauce
- 1 cup water
- 1 can (6 ounces) tomato paste
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 package (8 ounces) no-cook lasagna noodles
- 4 cups (16 ounces) shredded part-skim mozzarella
- cheese
- 1-1/2 cups (12 ounces) 4% cottage cheese
- 1/2 cup grated Parmesan cheese

- 12 Rhodes™ Dinner Rolls, thawed but still cold
- 1 1/2 cups cooked chicken breast, cubed
- 6 green onions including tops, chopped
- 1 medium size red pepper, chopped
- 8 ounce can crushed pineapple, drained
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon prepared mustard
- 1 beaten egg
- 2 tablespoons sesame seeds

- 1 1/2 pounds hamburger
- 1 clove garlic
- 4 carrots
- 2 potatoes
- 1 onion
- 2 1/2 pound canned tomatoes- 3 1/2 cups
- 4 celery tops
- 1 tablespoon parsley flakes
- 1 teaspoon salt
- 1 bay leaf
- 1/4 teaspoon each thyme, basil and pepper
- 3 beef bouillon cubes
- 3 cups water
