BBQ RIBS AND SAUCE

Mix all sauce ingredients well, boil, and then simmer for an hour or so until sauce thickens
- SAUCE:
- 1 - 24 oz. bottle ketchup
- 1 1/4 cup brown sugar
- 2 tablespoon Worcestershire sauce
- 2 teaspoon chili powder
- 1/2 teaspoon garlic salt
- 1 tablespoon dry mustard
- 1/4 cup vinegar
- 1 medium onion, chopped
- 1 large slab of pork baby back ribs, cut into 2 pieces.
BANANA SPLIT CAKE

CRUST: Mix crushed graham crackers with melted butter and sugar, then spread into 9"X13" pan
- CRUST:
- 2 cups crushed graham crackers
- 1/2 lb. melted butter
- 1 Tbs sugar
- FILLING:
- 1 lb. confectioner's sugar
- 2 sticks butter or margarine(not melted
- 2 eggs
- 8 oz. cream cheese
- TOPPING:
- 3 bananas
- 20 oz. can of crushed pineapple, drained.
- 12 oz. bowl of Cool Whip topping
- 1/2 cup crushed peanuts or pecans
Orzo Salad

Preheat oven to 425 degrees
- DRESSING:
- 2/3 cup shredded carrots
- 1 red bell pepper, 1-inch diced
- 1 yellow bell pepper, 1-inch diced
- 1 red onion, peeled and 1-inch diced
- 2 garlic cJoves, minced
- 1/4 cup good olive oil
- 1 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 pound orzo pasta, dry
- 1/3 cup freshly squeezed lemon juice (2 small lemons)
- 1/3-1/2 cup good quality extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- ASSEMBLY:
- 4 scallions, minced (white & green parts)
- 1/4 cup pignolis, toasted (pine nuts)
- 3/4 pound good feta cheese, 1/2" diced
- 15 fresh basil leaves, cut into chiffonade
Corn Casserole

Saute onions in butter and mix with corn w/ juice, creamed corn, beaten eggs, & 1/2 box of muffin mix
- 1 can whole kernel corn, not drained
- 1 can cream style corn
- 1/2 cup chopped onions (optional)
- 1/2 stick margarine or butter
- 2 eggs
- 1 box Jiffy corn muffin mix
- 8 oz sour cream
- 1 TBSP milk
Buttermilk Pancakes

In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Dash of salt
- 1 cup buttermilk
- 1 egg
- 3 tablespoons meted butter
PUMPKIN DUMP CAKE

Mix pumpkin, milk, cinnamon, ginger, eggs, sugar, salt and cloves together well
- 2 (No. 1) cans pumpkin
- 3 C. evaporated milk
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1 yellow cake mix
- 1 C. chopped pecans
- 4 eggs, well beaten
- 1 1/2 C. sugar
- 1 tsp. salt
- 1/2 tsp. cloves
- 1 stick butter, melted

- 4 large baking potatoes
- (about 2 3/4 pounds)
- 2/3 cup butter or margarine
- 2/3 cup all-purpose flour
- 3/4 teaspoon salt
- 1/4 teaspoon white pepper
- 6 cups milk
- 1 cup (8 ounces) sour cream
- 1/4 cup thinly sliced green onions
- 10 bacon strips, cooked and crumbled
- 1 cup (4 ounces) shredded cheddar cheese
Risotto with Peppers & Zucchini

In a small saucepan, bring the stock to a simmer
- 6 cups chicken stock
- 1/4 cup olive oil
- 1 medium red bell pepper, seeded and diced
- 1 medium yellow bell pepper, seeded and diced
- 2 small zucchini, 1" dice
- 2 tablespoons butter
- 1/2 cup finely chopped yellow onions
- 1 teaspoon minced garlic
- 1 1/2 cups arborio or carnaroli rice
- 1/2 cup dry white wine
- 2 sprigs fresh thyme
- 1/4 cup thinly sliced green onion, green tops-only
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh cracked white pepper
- 1 cup grated Parmigiano-Reggiano cheese

Spray dutch oven with nonstick cooking spray
- 2 pounds ground chuck
- 1 pound spicy sausage (Bob Evan's Hot)
- 2 large chopped onions
- 1 tsp dried oregano
- 1 tsp salt
- 1 can (6 ounces) tomato paste
- 1 can (14 5 ounces) tomato sauce
- 1 can (14.5 ounces) water
- 1 large can (25 ounces) diced tomatoes
- 1 can (14.5 ounces) diced tomatoes w/ chile peppers
- 1 can (15 ounces) mild chili beans (Bush's)
- 1 can (15 ounces) spicy chili beans (Bush's)
- 4 - 5 tsp teaspoon chili powder (to taste)
- 1/8 - 1/4 tsp red pepper flakes (to taste)
