Skillet Tofu Parmigana

1. Combine breadcrumbs and Italian seasoning in a shallow dish
- 1/4 cup plain dry breadcrumbs
- 1 teaspoon Italian seasoning
- 1 14-ounce package firm tofu, rinsed
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- Extra-virgin olive oil
- 1 small onion, chopped
- 8 ounces white mushrooms, thinly sliced
- 1/4 cup grated Parmesan cheese
- 3/4 cup prepared marinara sauce
- 1/2 cup shredded part-skin mozzarella
- 2 tablespoons chopped fresh basil
Pasta with Broccoli (or Rabe)

1. Bring water to boil in a large pot and add salt
- 1 Tbsp salt
- 1 lb broccoli or broccoli rabe
- 1/4 cup extra-virgin olive oil
- 1 Tbsp chopped garlic
- 1 lb penne, ziti or other pasta
- Freshly ground black pepper
Beer-Glazed Black Beans

1. Put the beans in a large pot and add enough cold water to cover by 2 to 3 inches
- 1/2 lb dried black beans, rinsed
- Salt and freshly ground black pepper
- 1 onion, chopped
- 1 Tbsp minced garlic
- 1 cup beer
- 1 Tbsp chilli powder
- 1 Tbsp honey
Balsamic-Glazed Salmon Filet

Preheat oven to 400F. Line a baking sheet with foil and spray with non-stick cooking spray
- 4 cloves garlic, minced
- 24 oz salmon filet
- 2 1/2 tsp honey
- 1/4 cup balsamic vinegar
- 1 1/8 Tbsp dijon mustard
- 2 1/2 tsp fresh oregano, chopped
- 1/8 cup white wine
