- 2 3/4 cups sugar
- 4 ounces unsweetened chocolate
- 3 tablespoons butter, plus more for greasing pan
- 1 cup half-and-half
- 1 tablespoon corn syrup
- 1 tablespoon vanilla extract
- 1 cup chopped, roasted nuts, optional
Blueberry Scones with Lemon Glaze

Preheat the oven to 400 degrees F
- Blueberry Scones:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 5 tablespoons unsalted butter, cold, cut in chunks
- 1 cup heavy cream, plus more for brushing the scones
- 1 cup fresh blueberries
- Lemon Glaze:
- 1/2 cup freshly squeezed lemon juice
- 2 cups confectioners' sugar, sifted
- 1 lemon, zest finely grated
- 1 tablespoon unsalted butter
Smoked Salmon

- 1 cup kosher salt
- 1/2 cup sugar
- 1/2 cup dark brown sugar
- 1 tablespoon crushed black peppercorns
- 2 large salmon fillets or sides, pin bones removed
Spicy Shrimp Cakes with Corn and Avocado Salsa

To prepare cakes, place shrimp in a food processor; pulse 10 times or until finely chopped
- 1 pound medium shrimp, peeled and deveined
- Cooking spray
- 1 cup finely chopped red bell pepper
- 1 garlic clove, minced
- 1/4 cup thinly sliced green onions
- 3 tablespoons reduced-fat mayonnaise
- 1 tablespoon fresh lime juice
- 1 1/2 teaspoons hot sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1 large egg
- 1/4 cup finely chopped fresh cilantro
- 3/4 cup panko (Japanese breadcrumbs), divided
- 1 cup frozen white corn, thawed
- 3/4 cup diced peeled avocado
- 1/4 cup chopped fresh cilantro
- 3 tablespoons finely chopped red onion
- 2 tablespoons finely chopped seeded poblano pepper
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
Beef Tenderloin Bruschetta with Brown Butter

Combine first 7 ingredients in a small bowl; cover and let stand at room temperature 15 minutes
- 1/2 cup diced mango
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons lime juice
- 2 teaspoons finely chopped serrano chile
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon ground turmeric
- 1 1/2 teaspoons canola oil
- 1/2 teaspoon yellow mustard seeds, divided
- 1 1/2 teaspoons butter, melted
- Cooking spray
- 1 (4-ounce) beef tenderloin steak, trimmed (1 inch thick)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 16 (1/4-ounce) diagonal slices French bread baguette, toasted (1/2 inch thick)
Pan Fried Fish

Heat a heavy pan over medium high heat
- 1 large or two small skin-on fish fillets, about 8 ounces (rainbow trout, small salmon, brown trout)
- Kosher salt
- Ground black pepper
- Flour for dredging
- 2 tablespoon Canola oil
- 3 tablespoons butter
- 1 tablespoons capers, drained
- 1 lemon, juiced
Striped Bass in Salt Dome

Heat oven to 450 degrees. Cover the bottom of a baking sheet large enough to hold the fish with parchment paper
- 1 striped bass, 5 to 6 pounds, gills removed, fins trimmed
- 4 egg whites
- 1/2 cup water
- 2 (3 pound) boxes of kosher salt
- 1 handful parsley
- 1 fennel bulb, (with stem) quartered
- Several sprigs thyme
- 1 lemon, sliced thin
- 1/2 orange, sliced thin
- Olive oil
GOD Chili

1. Pray to each the meat god, the vegetable god, and the chili god for a delightful meal
- 1/2 tbsp + 1/2 tsp chili powder
- 2 lbs hamburger
- 1/4 tsp red pepper
- 2 29oz can tomato sauce
- 2 cans stewed tomatoes
- 1/4 cup brown sugar
- 1/2 tsp worcestershire sauce
- 2 cans 15oz kidney beans
- 2 cans 15oz spicy chili beans
- 1 onion
- 1 bell pepper
- salt, and pepper to taste

- 1 teaspoon baking soda
- 2 teaspoons baking powder
- Heavy pinch salt
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 egg
- 1 cup yogurt
- 1 1/2 cups fresh blueberries
- Vegetable spray, for the muffin tins
