In a small bowl, combine the garlic paste, lemon juice and zest, parsley, oregano, 1/2 tsp
- 2 medium cloves garlic, mashed to a paste with a pinch of salt
- 1 large lemon, finely grated to yield 2 tsp. zest and squeezed to yield 3 Tbs. juice
- 3 Tbs. finely chopped fresh parsley
- 1 Tbs. finely chopped fresh oregano
- Kosher salt and freshly ground black pepper
- 1/2 cup extra-virgin olive oil
- 4 6-oz. skinless halibut fillets (about 1 inch thick)

- 1 lb. chicken tenders
- 1/2 onion, chopped

- 1 1/2 cups whole milk

- 2 cups all-purpose flour
- 2 teaspoons seasoned salt

- 3/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 3 pounds cube steak (tenderized round steak that's been extra tenderized)

- 1/2 cup canola or vegetable oil
- 1 tablespoon butter
- 1/3 cup all-purpose flour
- 3 to 4 cups whole milk
- 1/2 teaspoon seasoned salt
- Freshly ground black pepper
- Mashed potatoes, for serving
