Bacon Cookies

DELICIOUS!
- 1 1/4 cup melted butter
- 1/4 cup bacon grease
- 2 cups sugar
- 2 large beaten eggs
- 1/2 cup maple syrup plus extra for the candied bacon
- 2.5 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 4 cups flour
- 2 lbs bacon
- 1/2 cup white sugar for coating the dough balls
Skillet Shepherd's Pie

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound ground beef
- 1 cup chopped onion
- 2 cups frozen corn, thawed
- 2 cups frozen peas, thawed
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 2 teaspoons minced garlic
- 1 teaspoon beef bouillon granules
- 1/2 cup boiling water
- 1 tablespoon cornstarch
- 1/2 cup sour cream
- 3-1/2 cups mashed potatoes (prepared with milk and butter)
- 3/4 cup shredded cheddar cheese
Chicken Chili

Preheat the oven to 375˚ F
- 3 boneless, skinless chicken breasts
- Salt and pepper
- 4 cups chopped yellow onion (2-3 onions)
- 2 tbsp. olive oil
- 2 cloves garlic, minced
- 3 bell peppers (I used 1 red, 1 orange and 1 yellow)
- 2 tsp. chili powder
- 2 tsp. ground cumin
- 1/4 tsp. red pepper flakes
- 1/2 tsp. cayenne pepper
- 1/2 tsp. dried oregano
- 1 chipotle chili in adobo sauce, finely diced
- 2 tsp. kosher salt
- 2 (28 oz.) cans whole peeled tomatoes in puree, not drained
- 2 (15 oz.) cans beans, drained and rinsed (I used 1 can black and 1 can pinto beans)
Pita Chips

Adjust the oven racks to the upper-middle and lower-middle positions and heat the oven to 350 degrees
- 4 (8-inch in diameter) pita breads
- 1/4 cup olive oil
- 1 teaspoon salt
Old Fashioned Beef Stew

Coat beef with flour, shaking off excess
- 1 lb. Lean beef chuck, trimmed and cut into 1 inch cubes
- 2 tablespoons all-purpose flour
- 2 teaspoons vegetable oil
- 2 large yellow onions, thinly sliced (about 3 cups)
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 2 teaspoons reduced-sodium tomato paste
- 2 cups reduces-sodium beef broth
- 4 cups sliced carrots
- 2 medium russet potatoes, thinly sliced (about 2 cups)
- 1 cup 1-inch green bean pieces
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 1/4 cup chopped fresh parsley
Good Old Fashioned Pancakes

In a large bowl, sift together the flour, baking powder, salt and sugar
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
Basic Yellow Cake

Preheat oven to 350° Cut wax paper to fit the bottom of (3) 9 x 1 1/2-inch round pans
- 2 1/4 cups all-purpose flour (do not sift the flour)
- 1 1/2 cups granulated sugar
- 3 1/2 teaspoons baking powder
- 1-teaspoon salt
- 1 1/4 cups milk
- Vegetable oil
- 1 stick butter (not margarine), softened
- 1-tablespoon vanilla extract
- 3 large eggs
Cocoa Cake

Heat oven to 350 degrees F
- 1 cup Cake Flour, unsifted
- 2/3 cup Unsweetened Cocoa
- 1/2 teaspoon(s) Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon(s) Salt
- 1 1/3 cup Sugar, (see direction step 5)
- 2 tablespoons Sugar
- 1/4 pound (1 stick) Butter, softened
- 4 large Eggs
- 1 cup Sour Cream
- 1 1/2 tablespoons Vanilla Extract
- 1 1/2 cups Heavy Cream
Chipped Beef on Toast

Melt margarine and blend in flour until all is smooth
- 2/3 stick butter or margarine
- 6 tablespoons plain flour
- 1 large jar sliced beef (chopped and rinsed)
- 2 cups milk
- 4 slices toast

- 1-1/2 cups finely grated peeled carrots
- 1-1/2 cups chopped cored peeled pears
- 1-3/4 cups chopped pineapple, including juice
- 3 Tbsp lemon juice
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 6 Tbsp Ball® RealFruit™ Classic Pectin
- 6-1/2 cups sugar
- 6 (8 oz) half pint glass preserving jars with lids and bands
