- 1/2 cup chocolate wafer crumbs (about 10 wafers)

- 2/3 cup sugar
- 2 eggs
- 2 cups Yoplait® 99% Fat Free creamy strawberry yogurt (from 2-lb container)

- Topping:
- 1 bag (10 to 12 oz) frozen whole raspberries, thawed
- 3 Tbsp sugar

- 2 tablespoons butter
- 3 ounces pepperoni, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/2 cup dry white wine
- 1 28 ounce can crushed tomatoes
- 1 tablespoon sugar
- 1/4 cup heavy cream, warmed (coconut cream for non dairy alternative)
- salt
- 1 pound rigatoni
- 1/4 cup finely chopped fresh basil leaves

- 4 c. low sodium chicken broth
- 1/2 c. frozen peas and carrots

Coconut Lime Cupcakes

Combine the flour, baking powder, baking soda, and salt in a bowl
- Cupcake:
- 1 1/4 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 3/4 cup sugar
- 1/2 cup oil
- 2 to 3 tsp lime zest (from 1 lime)
- 4 Tbsp lime juice (1 medium lime)
- 1 tsp coconut extract
- 3/4 cup coconut milk (from a can)
- Coconut Frosting & Garnishes:
- 8 oz cream cheese (I typically use Neufchatel)
- 1/2 cup unsalted butter, softened
- 1 1/2 tsp coconut extract
- 1 1/2 cups powdered sugar
- 2 to 4 Tbsp toasted coconut (Toast sweetened coconut flakes in a pan on the stovetop or in the oven, stirring frequently; once it browns it will happen quickly!)
- Lime slices, cut into fourths

- 1 1/2 cups sugar
- 2 extra-large eggs, at room temperature
- Red Velvet Frosting, recipe follows
- 8 ounces cream cheese, at room temperature
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 1/2 teaspoon pure vanilla extract
- 3 1/2 cups sifted confectioners' sugar (3/4 pound)
