Lamb and mango salad with sweet chilli dressing

- 600 g lamb fillets
- 1 tablespoon sesame oil
- 1 medium (150g) red onion, sliced thinly
- 2 medium (860g) mangoes, sliced
- 250 g cherry tomatoes, halved
- 1 cup (80g) bean sprouts
- 1 cup coarsely chopped coriander leaves
- 1/4 cup (60ml) sweet chilli sauce
- 1 tablespoon rice wine vinegar
- 1 medium (90g) lime, quartered
Salmon with teriyaki butter

This recipe is best made close to serving
- 6 salmon fillets or white fish fillets
- 150 g butter, chopped
- 2 tablespoons soy sauce
- 2 cloves garlic, crushed
- 1 1/2 tablespoons finely grated fresh ginger
- 1 tablespoon brown sugar
- 1 teaspoon finely grated lemon rind
- 1 1/2 tablespoons lemon juice
Lemony Roast Chicken with carrots and shallots.

Pre-heat oven to 200C. Place Carrots, shallots and olives in a large roasting tin, drizzle with 1 Tbspn olive oil...
- 500 g carrots, cut into sticks
- 75 g black olives
- 8 shallots (spring onions) peeled
- 2 Tbspn olive oil
- 8 chicken drumsticks
- Grated zest and juice of 1 lemon
- 2 cloves garlic
- 20 g parsley, chopped
- salt and pepper
Baby Leek and Blue Cheese au Gratin

Arrange leeks in oven-proof dish, pour over stock, cover and bake in prep oven at 190C for 15 min
- 175 g baby leeks, washed and trimmed
- 3 x 15ml Tbspns veg stock
- 40 g stilton cheese, crumbled
- 15 g fresh white bread crumbs
- 25 g chopped hazelnuts
- alt, pepper,
- 1/2 Tbspn chopped parsley
Philly with capsicum dip.

- 2 x 125g cans diced capsicum
- 1 cup brown sugar
- 1/2 cup brown vinegar
- 1 tablespoon sweet chilli sauce
- Paprika
