Fried Mac N Chees Balls

!. Cook macaroni drain and set aside
- 1 lb macaroni elbows
- 2 tbls unsalted butter
- 2 tbls flour
- 2 cups milk
- 2 tbls egg wash
- 1 lb grated white sharp cheddar
- 1 lb grated smoked Gouda
- salt and ground pepper
- 2 lg eggs
- 3 cups Panko
- peanut oil
Cilantro Lime Rice

1. Prepare rice and fluff with fork
- 3 cups cooked rice
- 2 small limes
- 1 zest of 1 lime
- 1/2 cup chopped fresh Cilantro
- 1 teaspoon salt
Spicy Guacamole

1. Mash Avacado with salt and lime juice
- 2 Avocado peeled
- 2 tsp fresh lime juice
- 1/2 cup chopped cilantro
- 1/4 cup chopped red onion
- 2 lg garlic cloves
- 2 tsp cracked red pepper
- 1/4 tsp sea salt
Dads Shepherd's Pie

1. Saute' onions in 4 tbs butter until tender over medium heat (10 mins)
- 1 1/2 lbs ground Lamb
- 1 1/2 lbs ground round Beef
- 1 large onion chopped
- 2 pkgs birdseye steamfresh mixed veggies
- 4 tablespoons butter
- 1 cup beef broth
- 2 1/2 oz Worcestershire sauce
- 1 pt Bisto gravy
- 12 oz red wine
- 2 tablespoons fresh thyme
- 4 cloves garlic
- 2 teaspoons sea salt
- 2 teaspoons pepper
- 2 teaspoons smoke seasoning
- 2 teaspoons Herbs de Provance
- 4 lbs mashed potatoes
Big D's Smoked Ribs 4 ways

Smoke
- 1 . Dry rub ribs with rub and place in Zip loc or airtight container.
- 2 . Pre-cook ribs in aluminum roasting pan with 4 pints Guinness in bottom @ 350 degree oven for 1 hour.
- 3 . Smoke ribs @ 220 degrees over Apple & Mesquite wood chips for 2 1/2 to 3 1/2 hours. After 1 1/2 hrs add barbeque sauce to ribs and place back to smoker for additional time.
- 4 . Grill over medium heat for 10-15 minutes to form crust.
- 5 . Let stand 5-10 minute in foil blanket before serving.
Guinness Reduction Sauce

Guinness reduction takes some time to make but is SO worth it
- 1 3/4 cup Guinness Stout
- 1 3/4 cup sugar
Pork Brine

1. Bring vinegar to boil. Combine all other ingredients in ZIp loc
- 2 cups Apple Cider Vinegar
- 1 cup salt
- 1 cup brown sugar
- 1 tablespoon whole black peppercorns
- 1 tablespoon mustard powder
- 1 tray ice cubes
- 2 pounds pork chops
Dads Famous Mac n' Cheese

1. Prepare penne pasta. 2
- 12 oz penne pasta
- 1/2 lb Velveeta cheese
- 3 tbsp butter
- 1 tbsp flour
- 1/4 tsp salt
- 1/8 tsp smoked paprika
- 1 1/2 cup milk
Big D's rib rub

mix all ingredients in coffee grinder or blender
- 4 tbls granulated sugar
- 2 tbls packed brown sugar
- 3 tsp garlic powder
- 3 tsp chili powder
- 3 tsp paprika
- 3 tsp ground cumin
- 2 tsp sea salt
- 2 tsp onion powder
- 2 tsp white pepper
- 2 tsp ground black pepper
- 2 tsp ground cloves
- 2 tsp cayenne pepper
- 2 tsp lemon pepper
- 2 tsp cajun seasoning
- 2 tsp Old Bay
- 2 tsp dried cilantro
- 2 tsp cinnamon chili seasoning
- 2 tsp praline powder
- 2 tsp tuscan
- 2 tsp coffee bbq
- 2 tsp smoked bbq
Homemade Margarita mix

Mix sugar with hot water until dissolved then and the lemon & lime juices
- 4 qt lemon juice
- 6 qt lime juice
- 4 qt sugar
- 4 qt hot water
