Crock Pot Chocolate Chip Blondies

This turned out to be very flakey on top, soft in the middle and firm around the edges
- 1 stick (1/2 cup) unsalted butter
- 1 cup of firmly packed brown sugar, I used light because that's what I had on hand
- 1 large egg
- 1 teaspoon of vanilla extract
- 1 cup of all purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of kosher salt
- 1 cup of chocolate chips

Creamy Crock Pot Roasted Garlic Mashed Potatoes

These creamy mashed potatoes were dubbed "holiday table worthy" from my picky husband
- 4 pounds of russett potatoes, peeled
- 2 bouillon cubes (I used vegetable, but chicken would work too)
- water (enough to cover potatoes completely)
- 1/4 cup butter
- 1/4 - 1/2 cup milk
- 4 ounces cream cheese, at room temperature
- 4 ounces sour cream
- 2 - 3 bulbs of roasted garlic, depending on how garlicky your family likes them
- 3 - 4 scallions, washed and chopped (I used whites only for mild oniony flavor)
- salt and pepper to taste
Southwestern Crock Pot Chicken with White Beans

This made enough for my family of 3 to have dinner and then made great tacos for lunch the next day with leftovers
- 3 pounds boneless, skinless chicken (can be breasts, thighs or tenderloins)
- 2 15 ounce cans of white beans (I used great northern beans, but any white bean wold work)
- 16 ounce package of frozen corn
- 1 16 - 24 ounce jar of your favorite salsa (I used a chunky salsa)
Crock Pot Chicken Goulash

This chicken goulash is like the quintessential comfort food
- 2 pounds boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 large yellow onion, sliced
- 1 sweet red bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped finely
- 3 large cloves garlic
- 1 tablespoon paprika
- 1 (28-ounce) can crushed tomatoes
- 1/4 cup red wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Crock Pot Ham and Cheese Pie (Crustless Quiche)

- 3 large eggs
- (1) 12 ounce can of evaporated milk
- 1/2 teaspoon of seasoned salt
- 1/2 teaspoon of ground black pepper
- 3/4 cup of baking mix

- 1 1/2 cups shredded sharp cheddar cheese
Crock Pot Cheesy Chicken and Stuffing

Spray the inside of a 3 - 5 quart crock pot with non-stick cooking spray
- 4 Chicken Breasts
- 1 1/2 - 2 cups shredded cheese
- 10.5 ounce can of "cream of" soup (whatever you have on hand will work fine)
- 6 ounce box of StoveTop Stuffing Mix
Crock Pot Baked Potato Soup

1.Combine first 6 ingredients in a 5 quart slow cooker 2
- 6 large russet potatoes, peeled and cut into 1/2 inch cubes (about 3 3/4 pounds)
- 1 large onion, chopped (I honestly only use a half onion because the first time I made this I used a whole one and it was too oniony)
- 3 (14 oz.) cans chicken broth
- 1/4 cup butter
- 2 1/2 teaspoons salt
- 1 1/4 teaspoons freshly ground pepper
- 1 cup (8 oz.)whipping cream or half and half
- 3 tablespoons chopped fresh chives
- 1 (8 oz.) sour cream (optional)
- 4 bacon slices, cooked and crumbled (or you can do like me and just buy the kind already off the shelf, not bacon bits but it’s actual bacon crumbles.)
- Shredded cheddar cheese (1 to 2 packages depending on how much cheese you would like)

Mix the can of soup and can full of water in a large mixing bowl
- 6 bell peppers, topped and seeded
- 10.75 ounce can of tomato soup + 1 can of water
- 2 cups of cooked rice
- 1 pound of turkey sausage, browned
- 1/2 cup ketchup
- 1 Tablespoon dried chopped garlic
- 1/2 cup dried chopped onion
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
